A Mocha Miracle

When it comes to sweet coffee drinks, who's gonna object to a little caramel and chocolate flavor up in there? Give it a sprinkle of sea salt, and you're in mega-yum territory!

Prep: 5 minutes
Cook: 5 minutes or less

Ingredients:
1 tbsp. unsweetened cocoa powder
2 tsp. instant coffee granules
1 1/2 tsp. semi-sweet mini chocolate chips
1/8 tsp. almond extract
1 - 2 no-calorie sweetener packets (like Truvia or Splenda)
2 tsp. fat-free, low-fat, or light caramel dip (like the kinds by Marzetti)
1 cup light vanilla soymilk
2 tbsp. Fat Free Reddi-wip
Dash coarse salt

Directions:
In a large microwave-safe mug, combine cocoa powder, coffee granules, chocolate chips, almond extract, and 1 sweetener packet. Add 1/2 cup very hot water and 1 tsp. caramel dip, and stir until ingredients mostly dissolve.

Add soymilk and mix well. Microwave until hot, about 1 minute.

If you like, stir in a second sweetener packet. Top with whipped cream, remaining 1 tsp. caramel dip, and salt. Sip!

Congratulations! You're one of the few people who are impervious to the lure of the Pumpkin Spice Latte. Maybe that flavor combo doesn't do it for you; maybe the taste of cloves reminds you of the dentist's office (it's a thing!)... Whatever the reason, you've found yourself scoping out the specials at Starbucks for something unrelated to a seasonal gourd. Maybe this mocha drink catches your eye. Why wouldn't it? Salt + caramel = the best. But the stats below kinda bum us out. And those numbers are for a moderately sized Tall drink -- we're well aware there are people who won't get out of bed for anything less than a Grande -- and the stats only get worse from there. So instead of venturing to your local Starbucks in search of a tasty coffee drink, take matters into your own hands, and make our swap at home. Does it taste identical to the one at Starbucks? No. But we prefer ours, especially since it isn't absurdly sweet like Starbucks'. Bonus? No line to wait in! (P.S. If you are craving a Pumpkin Spice Latte, make our swap for that instead.)
