GIRLS BITE OUT
Today is National Crabmeat Day, and HG's whipped up some crab-tastic
recipes that'll have you clawin' for more! Dig in!
Crazy-Creamy Crab-Stuffed Mushrooms
(Entire recipe: 135 calories, 3g fat, 975mg sodium, 12g carbs, 2g fiber, 4g
sugars, 16g protein = 3 Points)
These make both an awesome appetizer and a hot 'n cheesy snack!
Ingredients:
12 small-to-medium-sized (1 - 2" wide) brown mushroom caps (stems
removed)
2 oz. drained white crabmeat
2 tbsp. celery; minced
2 tbsp. red pepper; minced
1 wedge The Laughing Cow Light Cheese (any Light flavor)
1 tbsp. fat-free sour cream
1 tbsp. fat-free cream cheese
2 tsp. fat-free cheese flavor sprinkles (like the ones by Molly McButter)
Directions:
Preheat oven to 375 degrees. Wipe mushrooms clean with a damp paper
towel and then dry them. Place with the rounded sides down on a baking dish
sprayed lightly with nonstick spray. Combine all other ingredients and stir
until well mixed. Evenly distribute crab mixture among the mushroom caps.
Place in the oven for 10 - 12 minutes, until hot. Enjoy the creamy, crab-tastic
goodness! Makes 12.
HG's Crab-ulous Smothered Burrito!
(Entire burrito: 260 calories, 4.5g fat, 1,480mg sodium, 43.5g carbs, 19.5g
fiber, 3.5g sugars, 26g protein = 5 Points)
This fiber-and-protein-packed meal is a smothered seafood sensation!
Ingredients:
2 oz. drained white crabmeat
2 tbsp. fat-free cream cheese
2 tbsp. fat-free sour cream
1/4 tsp. lemon pepper seasoning
1/2 tsp. dried parsley
1 cup broccoli florets
1/4 cup canned black beans
1 La Tortilla Factory Low Carb Low Fat Tortilla, Large Size (or another low-
calorie, high-fiber tortilla*)
1/4 cup La Victoria Green Chili Enchilada Sauce (or another green enchilada
sauce*)
Directions:
Preheat oven to 375 degrees. Place broccoli in a microwave-safe bowl with 2
tbsp. water and cover; microwave for 3 minutes. Drain any remaining water
and set aside. Stir to combine crabmeat, cream cheese, sour cream, parsley
and lemon pepper seasoning. Place crab mixture on one half of the tortilla
and top with steamed veggies and black beans. Roll tortilla up tightly and
place on a baking dish sprayed lightly with nonstick spray. Place dish in the
oven and heat for 10 minutes (or until insides are thoroughly heated and
tortilla is slightly toasty). Meanwhile, heat up the enchilada sauce (stovetop
or in the microwave). Remove burrito and top with sauce. If desired, top with
a dollop of fat-free sour cream (not included in nutritionals). Enjoy! Serves 1.
HG's Cheesy 'n Crabby Crustless Quiche
(1 slice: 150 calories, 1.5g fat, 810mg sodium, 8g carbs, 1g fiber, 4.5g
sugars, 26g protein = 3 Points)
This crab concoction will impress everyone -- and it's super-simple to create!
Ingredients:
2 cups Egg Beaters, Original
1/2 cup skim milk
12 oz. drained lump crabmeat; chilled
3/4 cup Kraft Fat Free Shredded Cheddar Cheese (or another fat-free
shredded cheddar*)
1 large tomato; chopped
1 small onion; sliced
1/2 cup sliced peppers
1 and a 1/2 cups fresh spinach
1 tbsp. reduced fat grated parmesan cheese
1/2 tsp. garlic powder
1/2 tsp. pepper
Directions:
Preheat oven to 375 degrees. Stir to combine all ingredients except for the
grated parmesan. Pour mixture into a deep casserole dish (quiche will rise
during cooking) sprayed with nonstick spray. Use a fork to ensure that all of
the veggies and crab are submerged in the egg mixture. Place dish in the
oven and cook for 30 minutes. Next, carefully remove the quiche from the
oven and evenly distribute grated parm over the top; return to oven. Allow
quiche to cook for approximately 20 minutes longer, until quiche top has
puffed and is firm & golden brown. Remove from oven and allow to cool
before cutting. Serves 5!
HG Alternative: Imitation crabmeat can be substituted in all of these recipes.
Nutritional info will be similar, but sugars and sodium may be slightly higher.
