MEAT our new favorite recipes (insert dainty tee-hee laughter here)...


HG's Sausage, Peppers & Onions Italia!
(Entire recipe: 270 calories, 7 - 8g fat, 1,130 - 1,300mg sodium, 34 - 39g
carbs, 7 - 8g fiber, 16.5 - 18.5g sugars, 17.5 - 19.5g protein = 5 Points)

Try this served over steamed spaghetti squash or some Tofu Shirataki
noodles for added chewing fun!

Ingredients:
1 BOCA Meatless Italian Sausage or 1 Al Fresco Sweet Italian Style Chicken
Sausage (or 2.5 - 3 ounces of another cooked lean sausage alternative*)
1 and 1/4 cup thick onion slices
3/4 cup thick red pepper slices
3/4 cup thick green pepper slices
1/2 cup canned tomato sauce**
1 tsp. oregano
1/2 tsp. garlic powder
Optional: salt and pepper, to taste

Directions:
Defrost/heat sausage in the microwave (if preparing from frozen) and cut
into bite-sized chunks; set aside. Stir to combine sauce with oregano and
garlic powder. Over medium-high heat, place onions in a hot skillet sprayed
lightly with nonstick spray. Cook for 2 minutes. Add peppers and continue to
cook and stir for 3 - 5 minutes (until veggies are almost at desired texture).
Add sausage to pan and cook for an additional minute or two (until sausage
is hot); meanwhile, heat sauce in the microwave until very hot. Remove mix
from heat and immediately combine with sauce. Season to taste with salt and
pepper (or not). Now Mangia (that's Italian for eat)! Serves 1.

*Nutritionals calculated using the Boca & Al Fresco sausages specified. Other
lean sausage alternatives can be used, but nutritionals will likely vary (many
have more fat than these, which have 6 - 7 grams each). Plus, these
sausages rock!



The HG Hot 'n Beefy Stuffed Pepper
(Entire recipe: 250 calories, 1.75g fat, 1,080mg sodium, 40.5g carbs, 9g
fiber, 13.5g sugars, 25.5g protein = 4 Points)

Prepare to get seriously stuffed. Like this pepper...

Ingredients:
1 very large red pepper
1/2 cup (1/2 pouch) BOCA Ground Burger (or 1 BOCA Original Meatless
Burger*); defrosted
1/4 cup chopped onion
1/4 cup shredded fat-free cheddar cheese
1/4 cup cooked brown rice
1/2 tsp. taco seasoning mix; dry
1/4 cup canned tomato sauce**

Directions:
Preheat oven to 375 degrees. If using the Boca patty, chop it up into very
small pieces. Stir to combine all ingredients except for the pepper; set aside.
Slice the top off of the pepper and then slice it in half lengthwise; remove
seeds, wash and dry. Place pepper halves in a small baking dish sprayed
lightly with nonstick spray and cook for 15 minutes. Next, remove pepper
halves from oven and reduce temperature to 350 degrees. Evenly spoon
mixture into pepper halves and return to oven for 20 more minutes. Allow to
cool slightly before digging in. Serves 1.

HG Alternative! Downsize this yum-tastic dish by using a medium-large
pepper and omitting the rice. Nutritionals would then be 190 calories, 1.25g
fat, and 7.75g fiber (3 Points).

*If using BOCA patty add 10 calories, 10mg sodium, and a gram of fiber to
the total.



Inside-Out Meat-Lovers Pizza
(Entire recipe: 200 calories, 5g fat, 1,100mg sodium, 20g carbs, 5g fiber, 5g
sugars, 25g protein = 4 Points)

This pizza-rific pita is stuffed with lots of meat -- and soon you'll be, too!

Ingredients:
1/2 Western Bagel Alternative Pita (or half of another low-calorie pita*)
1 slice lean deli ham
5 turkey pepperoni slices (like HORMEL Turkey Pepperoni)
1 tbsp. Morningstar Farms Meal Starters Sausage-Style Recipe Crumbles (or
other low-cal cooked soy crumbles*); defrosted
1 oz. boneless skinless chicken breast; cooked
1 tbsp. chopped onion
2 tbsp. reduced fat (part skim) shredded mozzarella cheese
1/4 cup canned tomato sauce**

Directions:
Preheat oven to 350 degrees. Take pepperoni, ham and chicken and cut into
bite-sized pieces. In a small dish, combine all meat, soy crumbles, onion and
cheese; mix thoroughly. Heat pita slightly in microwave (5 -10 seconds) to
make it easier to open up. Carefully open pita and put about two thirds of the
tomato sauce at the bottom. Next dump in the meat/onion/cheese mix and
add remaining sauce on top. Carefully place pita in a baking dish sprayed
lightly with nonstick spray and bake in the oven for 8 - 10 minutes. Serves 1!

*Recipes calculated using brand names specified. Exact numbers may vary if
substitutions are made
