Is there a delicious and microwavable guilt-free breakfast sandwich out
there?

Hi Breakfast Girl,

Yes, there's actually one line in particular that I love. Jimmy Dean makes
these breakfast sandwiches called D-Lights. They come in three varieties (all
great) and feature egg whites (no yolks). There's a Canadian bacon one with
American cheese (230 calories, 6g fat, 2g fiber -- POINTS® value 5*), a
Black Forest ham version with Swiss cheese (240 calories, 6g fat, 2g fiber --
POINTS® value 5*), and a turkey sausage one with American cheese (260
calories, 7g fat, 2g fiber -- POINTS® value 5*). Actually, I'm really glad you
asked about breakfast sandwiches, because even though I've written about
the D-Lights before, there's something important about them that I want to
address. The instructions on the box say to microwave the frozen sandwiches
for two minutes. This is way too long. If you nuke one of these sandwiches
for a full two minutes, it will become overcooked and rubbery. I've actually
heard from people who say they do NOT like these sandwiches because of
how rubbery they turn out, and I think that's really a shame. These
sandwiches are GREAT -- but you need to heat them for just about a minute
in the microwave. When they're nuked for too long, the texture becomes
really odd and, well, RUBBERY. Hear that, Jimmy D? Change the box
instructions!!! (Sorry, didn't mean to yell.) If you're feeling wild and up for a
challenge slightly more difficult than simply tossing something in the
microwave, try whipping up HG's EggaMuffin -- that's only got 165 calories
and 1.5g fat (POINTS® value 3*). Yum!

I saw your recipe for the chocolate muffins made from just a box of devil's
food cake mix and a can of pumpkin. I was wondering, could I use any kind
of cake mix with the pumpkin and get the same results? I was thinking of
using a spice cake mix.

Dear Cake Craver,

Great thinking! And the answer is YES. You can actually add a 15-oz. can of
pure pumpkin to ANY flavor of cake mix, and bake up a delicious treat with a
brownie-like texture. I've heard spice cake works particularly well with
pumpkin (not surprising at all!), and I've heard good things about yellow
cake, lemon cake, and more. I love to experiment with cake mixes and guilt-
free ingredients -- you can save so many calories and fat grams by using
things other than oil and eggs. Feel free to play around with stuff like egg
whites, unsweetened applesauce, and even diet soda. I love doing this with
Pillsbury Reduced Sugar Cake Mixes, since they're a bit lower in calories
than most mixes. We made a great cake here at the HG HQ by mixing a box
of the Classic White with 4 egg whites, 1/4 cup unsweetened applesauce, and
1 1/4 cups water (that's it!). It cooked in practically half the time called for
on the box, and each serving (1/12th of the pan) had just 168 calories and
3.5g fat, plus a gram of fiber (POINTS® value 3*). That's way fewer calories
and fat than a regularly prepared piece of cake, and it tasted just as good!
