HG's Loaded Miracle Mashies
Mash Hit!
Ooooh, here's your chance to enjoy LOADED mashed potatoes -- complete
with bacon, cheese, and sour cream. YES!!!
Ingredients:
3 oz. cubed red potatoes (about 1 - 2 small potatoes), not peeled
1 1/2 cups chopped cauliflower
1 1/2 tbsp. fat-free sour cream
1 tbsp. fat-free non-dairy liquid creamer (like Coffee-mate Original Fat Free)
1 slice fat-free American cheese
1 tbsp. real bacon bits (like the kind by Oscar Mayer or Hormel)
1 tsp. chopped chives
dash salt
Optional: black pepper, additional salt, to taste
Directions:
Place potatoes and cauliflower in a medium microwave-safe bowl with 2 tbsp.
water. Cover and microwave for 6 minutes, until very tender.
Once the bowl is cool enough to handle, drain any excess water. Transfer
potatoes and cauliflower to a large bowl, and set the medium bowl aside for
later use.
Add creamer, sour cream, and salt. Using a potato masher or fork, mash
until completely blended. If you like, season to taste with pepper and
additional salt. Place mixture in the medium microwave-safe bowl.
Lay cheese slice over the potato-cauliflower mixture. Microwave for about 30
seconds, until the cheese has melted.
Top with bacon bits and chives. Enjoy!

Chili's Loaded Mashed Potatoes
Monster Mash!
You know how restaurants like to take poor, defenseless potatoes, smash
them up with crazy amounts of butter and cream, and then top them with
cheese and bacon? Yeah, it's pretty mean. And not just for the potatoes, but
also for all of us who have to stare at the stuff wishing we could stick our
faces in a giant bowl of it. Before you cave, noodle THIS... A side of loaded
mashed potatoes from our "frenemies" at Chili's packs in 500 calories and 32
grams of fat! And remember, that's for a SIDE DISH. No thank you! We've
doctored up our delicious cauliflower-'n-potato-packed Miracle Mashies and
made them even MORE amazing by adding a few of our favorite things. Uh-
oh, we feel a little ditty coming on. "Clouds of white mashies with bacon-y
sashes... cheese gobs that stay on my nose and eyelashes..." Ewwww. On
second thought, forget the song. We're WAY better at making low-fat food
swaps than we are at writing lyrics.
