Pepperoni is pleasant, sausage is swell, plain cheese is perfectly fine... but

we're getting a little CRAZIER with our pizzas today! Fasten your seatbelt

(and, um, we won't ask why your desk chair has a seatbelt)!





Breakfast Scramble Pizza Pie



PER SERVING (entire recipe): 240 calories, 8g fat, 929mg sodium, 26.5g

carbs, 13.5g fiber, 5.5g sugars, 26g protein -- POINTS® value 5*



OK, so we've been eating pizza-inspired breakfasts for years now (not to

mention the occasional slice of cold pizza in the morning), but this is REAL no-

guilt pizza for the A.M.!



Ingredients:

1 slice center-cut bacon or turkey bacon

1/3 cup fat-free liquid egg substitute (like Egg Beaters Original)

1 La Tortilla Factory Smart & Delicious Low Carb High Fiber Large Tortilla

1 stick light string cheese

1/4 cup canned crushed tomatoes

Dash Italian seasoning, or more to taste

2 tbsp. finely chopped onion

2 tbsp. finely chopped red bell pepper

Optional: reduced-fat Parmesan-style grated topping



Directions:

Preheat oven to 350 degrees.



Prepare bacon according to package directions, either in the microwave or in

a skillet sprayed with nonstick spray. Chop or crumble and set aside.



Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add

egg substitute and scramble until fully cooked. Remove from heat and set

aside.



Place tortilla on a baking sheet sprayed with nonstick spray. Bake in the

oven for 5 - 6 minutes per side. Once slightly crispy, remove from oven, but

do not turn oven off.



Meanwhile, break string cheese into thirds and place in a food processor or

blender -- blend at high speed until cheese takes on a shredded or grated

consistency. (Or just tear string cheese into pieces and roughly chop.) Set

aside.



Spread crushed tomatoes over the tortilla, leaving a 1/2-inch border around

the edge. Sprinkle with a dash or more of Italian seasoning. Evenly distribute

scrambled eggs over the tomatoes. Top evenly with shredded/grated string

cheese, onion, pepper, and bacon.



Bake in the oven for 8 - 10 minutes, until pizza is hot and cheese has melted.

If you like, top with some Parm-style grated topping. Slice it into quarters

and eat up!!!

Purple Pizza Eaters



PER SERVING (2 mini pizzas, 1/2 of recipe): 240 calories, 5g fat, 812mg

sodium, 32g carbs, 6.75g fiber, 2g sugars, 20.5g protein -- POINTS® value

Who else on this planet would bring you guilt-free PURPLE PIZZA?! We'll

answer that for you -- NO ONE.



Ingredients:

3 oz. purple potato (about 1 small one), thinly sliced

2 sticks light string cheese

1/4 cup fat-free ricotta cheese

2 drops purple food coloring (or a drop each of red and blue)

1/8 tsp. garlic powder

2 dashes salt

2 tbsp. finely chopped red onion

2 light English muffins, split into halves

2 tbsp. real crumbled bacon (like the kind by Oscar Mayer)

Optional: black pepper, additional salt



Directions:

Preheat oven to 375 degrees.



Place potato slices in a microwave-safe bowl with 2 tbsp. water. Cover and

nuke for about 2 minutes, until potatoes have softened slightly. Drain water

and set aside.



Break each stick of string cheese into thirds, and place in a food processor or

blender -- blend at high speed until cheese takes on a shredded or grated

consistency. (Or tear string cheese into pieces and roughly chop.) Set aside.



In a small bowl, mix ricotta cheese with food coloring, garlic powder, and

salt, and stir until blended. Mix in onion, and then evenly distribute purple

ricotta mixture among muffin halves. Chop potato slices into bite-sized

pieces, and evenly distribute those as well.



Sprinkle "pizzas" with shredded/grated string cheese and bacon. Place on a

baking sheet sprayed with nonstick spray.



Bake in the oven for 10 - 12 minutes, until pizzas are hot and string cheese

has melted. If you like, season with pepper and additional salt. Now chew,

you crazy thing!



MAKES 2 SERVINGS



HG Alternative! If you can't find purple spuds, grab a small red-skinned

potato. It won't be as beautiful, but it'll work fine.



HG Tip! If you're noshing solo, only bake two of the mini pizzas. Wrap the

others in plastic wrap and freeze for another time -- then just thaw, bake,

and eat!











The Great Greek Pizza



PER SERVING (entire recipe): 277 calories, 4.75g fat, 990mg sodium, 38g

carbs, 8.5g fiber, 4.5g sugars, 19g protein -- POINTS® value 5*



How have we NOT made a pizza on a pita yet?! Don't worry, we're making it

up to you now...



Ingredients:

1/2 cup chopped spinach, thawed from frozen, squeezed dry

2 tbsp. crumbled fat-free feta cheese

1/2 tsp. crushed garlic

1 stick light string cheese

1 whole-wheat or high-fiber pita

3 tbsp. canned crushed tomatoes

2 thin slices red onion, rings separated and halved

1 tbsp. sliced black olives

4 slices plum tomato

Dash dried oregano or 1/4 tsp. fresh oregano

Optional: salt and black pepper



Directions:

Preheat oven to 375 degrees.



In a medium bowl, combine spinach, feta cheese, and garlic. Mix well and set

aside.



Break string cheese into thirds and place in a food processor or blender --

blend at high speed until cheese takes on a shredded or grated consistency.

(Or just tear string cheese into pieces and roughly chop.) Set aside.



Spray a baking sheet with nonstick spray, and lay pita in center. Spread

crushed tomatoes over the pita, leaving a 1/2-inch border around the edge.

Evenly top with spinach-feta mixture, and then cover with shredded/grated

string cheese.



Place onion, olive, and tomato slices on top of your "pizza," and sprinkle with

oregano.



Bake in the oven for 8 - 10 minutes, until pizza is hot and string cheese has

melted.



If you like, season to taste with salt and pepper. Cut into wedges, and enjoy!
