Pumpkin Crème Dream
(Entire recipe: Approx. 50 calories, 2.5g fat, 138mg sodium, 6g carbs, 2g fiber, 1g sugars, 1g protein = 1 Point!)
This sweet 'n creamy holiday treat was born when some of our favorite stuff jumped into a pot together. Woohoo!
Ingredients:
2 tbsp. canned pure pumpkin
6 oz. Almond Breeze, Unsweetened Vanilla (or light vanilla soymilk*)
1/4 tsp. pumpkin pie spice
1/4 tsp. cornstarch
1/4 tsp. vanilla extract
no-calorie sweetener (such as SPLENDA); to taste
Directions:
In a small pot, combine all ingredients (except for sweetener) and stir well. Bring to a boil, stirring constantly. Once mixture begins to froth, continue to boil for 1 minute. Remove from heat and pour into a mug. Allow to cool slightly. Sweeten liberally with your no-cal sweetener of choice and enjoy. Serves 1.
