All the flavor of two decadent foods in one single-serve, no-cook dessert!
Ingredients:
1/4 cup fat-free cream cheese
2 tsp. Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
1 no-calorie sweetener packet
(like Splenda or Truvia)
1/8 tsp. maple extract
1/4 cup Cool Whip Free (thawed)
2 tsp. sugar-free pancake syrup
2 tbsp. Fiber One Original bran cereal, finely crushed
1/2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
2 dashes cinnamon
2 caramel-flavored mini rice cakes, roughly crushed
Directions:
In a medium bowl, stir cream cheese until smooth.
In another medium bowl, combine pudding mix with half of the sweetener packet. Add maple extract and 1 tbsp. cold water, and vigorously stir until mostly smooth and slightly thickened.
Add cream cheese and Cool Whip to the pudding mixture, and stir until smooth and uniform. Stir in 1 1/2 tsp. pancake syrup.
In a third medium bowl, combine crushed cereal with butter. Add a dash of cinnamon and the remaining half of the sweetener packet. Add 2 tsp. water, and stir until uniform. If you like, transfer to a parfait glass.
Top cereal mixture with the cream cheese mixture, followed by the crushed rice cakes, remaining dash of cinnamon, and remaining 1/2 tsp. syrup. Dive in!
