We took the classic egg in a hole and made it lighter AND more decadent. It's a HOLE lotta yum!
Ingredients:
1 slice light bread
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 large egg
1 slice fat-free American cheese
Optional seasonings: salt and black pepper
Directions:
Carefully cut a circle, about 2 inches in diameter, from the center of the bread. (Use the top of a glass, if you've got one that size.) Discard the circle.
Bring a skillet sprayed with nonstick spray to medium heat. Add butter and let it coat the bottom.
Place the bread in the pan. Crack the egg directly into the center of the hole in the bread. If you like, sprinkle egg with salt and pepper.
Cook for 2 - 3 minutes, until egg is about halfway cooked.
Carefully flip the bread and the egg together. If you like, sprinkle egg with more salt and pepper.
Cook for about 2 more minutes, until egg is cooked to your preference. Top with cheese, and eat up!
