This ADORABLE dessert is exploding with fruity flavor. Love that pop of lemon zest!
1/4 cup fat-free cream cheese
2 tsp. Jell-O Sugar Free Fat Free Vanilla Instant pudding mix
1 tsp. lemon juice
1/4 tsp. lemon zest
1 no-calorie sweetener packet (like Splenda or Truvia)
1/4 cup Cool Whip Free (thawed)
1 low-fat honey graham cracker (1/4 sheet), roughly crushed
1 tbsp. low-sugar strawberry or raspberry preserves
In a medium bowl, stir cream cheese until smooth.
In another medium bowl, combine pudding mix, lemon juice, lemon zest, sweetener, and 1 tbsp. cold water. Vigorously stir until mostly smooth and slightly thickened. Add Cool Whip and cream cheese, and stir until smooth and uniform.
If you like, transfer to a small glass or bowl. Top with crushed graham cracker and preserves. Enjoy!
