Since a tostada is a little like an open-faced sandwich, we had zero qualms about loading one up with bacon, lettuce, and tomato. A ranch sauce seals the deal!
Ingredients:
Two 6-inch corn tortillas
5 slices center-cut bacon or turkey bacon
1 1/2 tbsp. fat-free mayonnaise
1/4 tsp. ranch dressing/dip seasoning mix
3/4 cup shredded lettuce
1/2 cup finely chopped tomatoes
Directions:
Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.
Lay tortillas flat on the sheet, and spray with nonstick spray.
Bake for 5 minutes.
Carefully flip tortillas, and bake until crispy, 3 - 5 minutes.
Cook bacon until crispy, either in a large skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.) Chop or crumble bacon.
In a medium bowl, mix ranch seasoning into mayo. Add lettuce and stir to coat.
Evenly top tortillas with lettuce mixture, tomatoes, and chopped/crumbled bacon. Enjoy!
