Ingredients:
3 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 cup light vanilla soymilk
1 cup fat-free liquid egg substitute (like Egg Beaters Original)
3 tbsp. granulated white sugar
2 tsp. cinnamon
3/4 tsp. vanilla extract
1 cup light/low-fat ricotta cheese
3 cups peeled and diced apples
12 slices light bread, lightly toasted
Directions:
Spray the inside of a slow cooker with nonstick spray.
In a medium microwave-safe bowl, microwave butter for 20 seconds, or until melted. Add soymilk, egg substitute, 2 tbsp. sugar, 1 tsp. cinnamon, and 1/2 tsp. vanilla extract. Whisk thoroughly.
In a large bowl, combine ricotta cheese, remaining 1 tbsp. sugar, remaining 1 tsp. cinnamon, and remaining 1/4 tsp. vanilla extract. Mix until uniform. Add apples, and stir to coat.
Tear toasted bread into 1-inch squares. Place 1/3rd of the bread in the bottom of the slow cooker. Top with 1/3 of the apple mixture. Repeat twice with remaining bread and apple mixture.
Pour the egg mixture over the contents of the slow cooker. Cook on high for 3 hours or low for 7 hours, until set.
