Ingredients:
1 tsp. cornstarch
1 1/2 cups peeled and chopped apples
1 tbsp. granulated white sugar
1/2 tsp. lemon juice
1/2 tsp. cinnamon
1/8 tsp. vanilla extract
Dash salt
Two 6-inch corn tortillas
Optional topping: fat-free or light whipped topping
Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
In a medium nonstick pot, combine cornstarch with 1/4 cup cold water, and stir to dissolve. Add apples, sugar, lemon juice, cinnamon, vanilla extract, and salt. Stir well. Set heat to medium low. Stirring frequently, cook until apples have slightly softened and mixture is thick and gooey, 10 - 12 minutes. Remove from heat.
Meanwhile, lay tortillas on the sheet. Bake for 5 minutes. Flip tortillas. Bake until tortillas are crispy, about 5 more minutes.
Divide apple mixture between the crispy tortillas. Enjoy!
