Not only is this recipe a glorious little piece of guilt-free junk-food fusion, but it's also quick 'n easy to assemble. Double whammy!
1 frozen meatless hamburger-style patty with 100 calories or less (like Boca Original Vegan Veggie/Meatless Burger)
2 corn taco shells (flat-bottomed shells, if available)
1 slice fat-free American cheese
1/4 cup shredded lettuce
4 hamburger dill pickle chips
2 tbsp. diced tomato
2 tbsp. diced onion
Optional: ketchup, mustard, and fat-free mayonnaise
Place burger patty on a microwave-safe plate and microwave until thawed, about 1 minute. Chop into bite-sized pieces. Microwave until hot, about 30 seconds.
To assemble, equally distribute patty pieces between the 2 shells. Tear cheese slice in half, and place 1 half in each shell.
If you like, top with any of the optional condiments (or your guilt-free burger toppings of choice). Evenly distribute lettuce, pickle chips, tomato, and onion between the shells. Dig in!
