1/4 cup light chocolate ice cream, slightly softened
1 tsp. mini semi-sweet chocolate chips
2 full-sized chocolate-flavored rice cakes (like Quaker Chocolate Crunch)

In a small bowl, stir chocolate chips into slightly softened ice cream. Spoon and spread mixture onto 1 rice cake.

Gently top with the other rice cake to form a sandwich. Freeze for 15 minutes, or until ice cream is firm... or just bite right in!
