Sometimes a sippable dessert with a kick is just what you need. For those times, reach for THIS...
1 low-fat honey graham cracker (1/4 sheet), finely crushed
1 1/2 oz. unsweetened coconut milk beverage (like the kind by So Delicious)
1 1/2 oz. coconut rum
1 tbsp. Cool Whip Free (thawed)
1 drop coconut extract
2 tbsp. Fat Free Reddi-wip
1/2 tsp. shredded sweetened coconut
Spread out graham cracker crumbs on a small plate. Wet the rim of a martini glass, and press it into the crumbs to coat.
Combine all remaining ingredients except Reddi-wip and shredded coconut in a shaker. Add 2 oz. cold water, and stir until smooth. Fill the shaker with ice. Shake and then strain into the glass. Top with Reddi-wip, sprinkle with coconut and, if you like, top with any remaining graham cracker crumbs. Mmmmm!
