Low-Calorie Pinterest-Inspired Recipes: Stuffed Apple Pie, Savory Calzone Danish

With all the wacky food blogs online and sites like Pinterest that make sharing Internet finds super-simple, we've been up to our necks in inspiration. Here are a couple of recipes we couldn't help but make over...


Stuffed-Apple Apple Pie

Entire recipe: 182 calories, 2g fat, 203mg sodium, 43g carbs, 6g fiber, 31g sugars, 1g protein -- PointsPlus® value 5*

That's right -- it's pie filling baked RIGHT INTO an actual apple. Our recipe is both cute and craveable. (Inspired by Domestic Dilettante.)

1 large Granny Smith apple
1/2 tbsp. brown sugar (not packed)
1 tsp. Splenda No Calorie Sweetener (granulated), or HG Alternative
1/4 tsp. cinnamon
Dash salt

1 low-fat cinnamon graham cracker (1/4 sheet), lightly crushed
1/2 tbsp. old-fashioned oats
3/4 tsp. brown sugar (not packed)
3/4 tsp. light whipped butter or light buttery spread (like Brummel & Brown), room temperature

Preheat oven to 375 degrees. Spray a baking pan with nonstick spray.

Slice off the top of the apple, about 1/2 inch. Carefully hollow out most of the inside flesh with a spoon or melon baller, leaving about 1/4 inch of flesh on the skin. Discard seeds and core.

Chop the scooped-out flesh and place in a bowl. Add brown sugar, Splenda, cinnamon, and salt, and stir to coat. Place mixture in the hollow apple, and pack down lightly with the back of a spoon.

Place apple in the baking pan. Cover pan with foil and bake for 30 minutes.

Meanwhile, in a small bowl, combine all topping ingredients. Stir/mash until well mixed and crumbly.

Remove foil. Sprinkle topping over the filling. Bake, uncovered, until topping has lightly browned, about 5 minutes. Eat!


HG Alternative: If made with an equal amount of granulated white sugar in place of Splenda, this recipe will have 196 calories, 47g carbs, and 35g sugars (PointsPlus® value 5*). 

Super-Savory Calzone Danish

1/6th of calzone: 217 calories, 10g fat, 585mg sodium, 23g carbs, 1.5g fiber, 5.5g sugars, 9g protein -- PointsPlus® value 6*

When we came across this calzone recipe on Squidoo (via Pinterest), we couldn't help but think how much it looked like a Danish. And that we should remake it. And then eat it. (And so we did.)

3 cups sliced mushrooms
1 cup chopped red onion
1 tsp. chopped garlic
4 cups chopped spinach leaves
1 package refrigerated Pillsbury Crescent Recipe Creations Seamless Dough Sheet, or HG Alternative
1/2 cup pizza sauce
1 cup shredded part-skim mozzarella cheese
1/4 cup sliced black olives

Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.

Bring a skillet sprayed with nonstick spray to medium-high heat. Add mushrooms, onion, and garlic. Cook and stir until softened, 6 - 8 minutes.

Add spinach and cook until wilted, 1 - 2 minutes. Transfer veggies to a large bowl and blot away excess moisture.

On the baking sheet, roll or stretch out dough into a large rectangle of even thickness. Arrange sheet with the short sides on the left and right.

Spread pizza sauce horizontally across the middle third of the dough, leaving 1/2-inch borders on the sides. Top sauce with cooked veggies and sprinkle with cheese.

Make vertical cuts about 1 inch apart along the top section of the dough, stopping about 1/2 inch above the filling, to create 1-inch-wide strips of dough. Repeat with the bottom section of the dough. Alternate folding the top and bottom strips over the filling, covering it completely and creating a "braided" criss-cross. Cross the last few strips toward the middle of the calzone. Fold the sides of the dough in and firmly pat to seal.

Evenly press olive slices into the dough strips on top. Bake until crispy and golden brown, 15 - 20 minutes. Slice and chew!


HG Alternative: If you can't find the Recipe Creations dough, go for Pillsbury Reduced Fat Crescent roll dough. (The products are nearly identical.) Then just pinch/seal up the perforations for a seamless sheet.
