Healthy Easy Snack Recipes: Cheese Bacon Zucchini, Trail Mix Yogurt, Cheese Corn Quesadilla

Creamy Cheesy Bacon 'Chini

Entire recipe: 113 calories, 3g fat, 510mg sodium, 13g carbs, 3.5g fiber, 6.5g sugars, 7.5g protein -- PointsPlus® value 3*

These four ingredients are so tasty together! How did we NOT think of this sooner? Dig in!

1 large zucchini, ends removed, cut lengthwise into 1/2-inch-thick strips
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tsp. Hellmann's/Best Foods Dijonnaise
2 tsp. precooked real crumbled bacon (like the kind by Oscar Mayer)

Bring a grill pan sprayed with nonstick spray to medium-high heat. Grill zucchini strips until charred on the outside and soft on the inside, about 5 minutes per side.

In a small bowl, thoroughly mix cheese wedge with Dijonnaise. Plate zucchini and evenly spread with the mixture. Sprinkle with bacon and enjoy!


Happy Trail Mix Yogurt

Entire recipe: 217 calories, 3.5g fat, 118mg sodium, 29.5g carbs, 1g fiber, 24g sugars, 16.5g protein -- PointsPlus® value 6*

Dress up your yogurt! Um, not with tiny accessories... with fun add-ins. (Barbie shoes are not delicious.)

6 oz. (about 2/3 cup) fat-free vanilla Greek yogurt (like the kind by Chobani)
5 thin salted pretzel sticks, broken into small pieces
1 tbsp. dried sweetened cranberries, chopped
1/2 tbsp. dry-roasted sliced almonds, lightly crushed
1/2 tbsp. mini semi-sweet chocolate chips

Place yogurt in a medium bowl, and stir in remaining ingredients. Grab a spoon, and eat up!


Double-Cheese Corn Quesadilla

Entire recipe: 194 calories, 5.5g fat, 414mg sodium, 22g carbs, 2g fiber, 2g sugars, 11g protein -- PointsPlus® value 5*

Two cheeses, two tortillas, ten minutes, one tasty item. That's our kinda math!

1 stick light string cheese
Two 6-inch corn tortillas
1 wedge The Laughing Cow Light cheese (any flavor!)
Optional toppings: fat-free sour cream, salsa

Break string cheese into thirds and place in a blender or food processor -- blend at high speed until shredded. (Or pull into shreds and roughly chop.)

Lay 1 tortilla flat and spread with the cheese wedge. Sprinkle with shredded string cheese, and top with the remaining tortilla to form the quesadilla.

Bring a skillet sprayed with nonstick spray to medium-high heat. Cook quesadilla until hot, about 2 minutes per side.

Slice into wedges and dig in!
