Every now and then, you need to ask yourself, "When was the last time I ate a waffle?" If you can't recall, it's time to make these recipes. Come to think of it, you should make 'em even if you had waffles just yesterday...

A dessert-inspired waffle breakfast with a mega protein count? This is the way to do Neapolitan, people!

Prep: 5 minutes
Cook: 5 minutes or less

Ingredients:
2 frozen low-fat waffles
One 5.3-oz. container (about 1/2 cup) fat-free vanilla Greek yogurt
2/3 cup sliced strawberries
1 tsp. mini semi-sweet chocolate chips

Directions:
Toast waffles. Plate one waffle, and top with half of the yogurt and half of the strawberries. Place another waffle on top, followed by remaining yogurt and strawberries.

Top with chocolate chips, and dig in!

Apple 'n Cheese Waffle Sandwich

Sigh... We think the combo of crisp apples with creamy cheese is sooooo dreamy, don't you? (We may or may not be batting our eyes at our breakfast right now. Don't judge.)

Prep: 10 minutes
Cook: 10 minutes

Ingredients:
2 frozen low-fat waffles
2 tbsp. finely chopped apple
1 tbsp. reduced-fat cream cheese
1 tbsp. 2% cottage cheese
1/8 tsp. cinnamon
1 drop vanilla extract
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 tsp. powdered sugar
Optional topping: sugar-free pancake syrup

Directions:
Lightly toast waffles.

In a medium bowl, combine apple, cream cheese, cottage cheese, cinnamon, and vanilla extract. Mix thoroughly.

Evenly top one waffle with apple mixture, and top with remaining waffle. Spread the top with 1 tsp. butter.

Bring a skillet sprayed with nonstick spray to medium heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.

Cook waffle sandwich until golden brown, about 2 minutes per side. Sprinkle with powdered sugar, and enjoy!
