Healthy Slow-Cooker Recipes: Hawaiian Chicken, French Toast

Hawaiian Slow-Cooker Chicken

Cook: 3 - 4 hours or 7 - 8 hours, plus 10 minutes

4 cups sliced bell peppers (any color)
4 cups sliced onion
One 8-oz. can pineapple chunks packed in juice (not drained)
1 1/4 lb. raw boneless skinless chicken breast, cut into strips
1/4 tsp. each salt and black pepper
3 tbsp. reduced-sodium/lite soy sauce
1 tbsp. brown sugar (not packed)
1 tsp. chopped garlic
1 tsp. chopped ginger
1 1/2 tbsp. cornstarch

Add veggies and pineapple (including juice) to a slow cooker. Season chicken with salt and black pepper, and add to the slow cooker.

In a small bowl, mix all remaining ingredients except cornstarch. Add mixture to slow cooker, and stir to coat.

Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours, until chicken is fully cooked.

Transfer about 1/4 cup of the liquid from the slow cooker into a small bowl. Once it cools slightly (after about 1 minute), add cornstarch, and stir to dissolve. Stir mixture into the liquid in the slow cooker. Stirring occasionally, cook uncovered until thickened, about 10 minutes.

Sure, you COULD stand over a hot stove, cooking plates of French toast to order. Or just turn on the slow cooker, sit back, and relax. Your call...

Prep: 25 minutes
Cook: 3 hours or 7 hours

3 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 cup light vanilla soymilk
1 cup fat-free liquid egg substitute (like Egg Beaters Original)
3 tbsp. granulated white sugar
2 tsp. cinnamon
3/4 tsp. vanilla extract
1 cup light/low-fat ricotta cheese
3 cups peeled and diced apples
12 slices light bread, lightly toasted

Spray the inside of a slow cooker with nonstick spray.

In a medium microwave-safe bowl, microwave butter for 20 seconds, or until melted. Add soymilk, egg substitute, 2 tbsp. sugar, 1 tsp. cinnamon, and 1/2 tsp. vanilla extract. Whisk thoroughly.

In a large bowl, combine ricotta cheese, remaining 1 tbsp. sugar, remaining 1 tsp. cinnamon, and remaining 1/4 tsp. vanilla extract. Mix until uniform. Add apples, and stir to coat.

Tear toasted bread into 1-inch squares. Place 1/3rd of the bread in the bottom of the slow cooker. Top with 1/3 of the apple mixture. Repeat twice with remaining bread and apple mixture.

Pour the egg mixture over the contents of the slow cooker. Cook on high for 3 hours or low for 7 hours, until set.
