We gave traditional antipasto flavors a modern makeover, complete with the nutritional powerhouse known as kale. Future classic, people!
6 oz. (about 2 cups) uncooked high-fiber rotini pasta
2 cups finely chopped kale
2 cups halved cherry tomatoes
2 cups quartered mushrooms
1 cup chopped cucumber
1 cup chopped red bell pepper
1 cup chopped red onion
1/3 cup light Italian dressing
16 slices turkey pepperoni, quartered
2 sticks light string cheese, cut into coins
1/4 cup sliced jarred pepperoncini (drained)
Prepare pasta according to package instructions. Drain and rinse with cold water. Transfer to an extra-large bowl.
Add all ingredients to the bowl, and toss to mix.
Serve it up! (Cover and refrigerate leftovers.)
