These crunchy little things are crammed with creamy, minty goodness. And they're SO easy to make!
15 frozen mini fillo shells (like the kind by Athens)
1 sugar-free vanilla pudding snack with 60 calories or less
1/2 cup Cool Whip Free (thawed)
1 tbsp. mini semi-sweet chocolate chips
1 standard-sized peppermint candy cane or 4 mini candy canes, lightly crushed
Preheat oven to 350 degrees.
Place shells on a baking sheet, and bake until lightly browned and crispy, 3 - 5 minutes.
Let cool completely, about 5 minutes.
In a medium bowl, mix pudding with Cool Whip until uniform. Stir in chocolate chips and 3/4ths of the crushed candy cane(s).
Evenly distribute pudding mixture among the shells. Sprinkle with remaining crushed candy cane(s). Enjoy!
