Sweet-tart apple bits, crunchy pistachios, juicy pomegranate arils... This incredible kale salad has it all!

Prep: 10 minutes
Chill: 1 hour

Ingredients:
Salad
6 cups chopped kale leaves
1 cup chopped green apple
1/4 cup pomegranate arils
1/2 oz. (about 24) pistachios, chopped

Dressing
2 tbsp. pomegranate juice
1 tbsp. extra-virgin olive oil or grapeseed oil
1 tsp. cider vinegar
1/4 tsp. minced garlic
1/8 tsp. salt
Dash black pepper

Directions:
Combine all salad ingredients in a large bowl.

In a medium bowl, whisk dressing ingredients.

Add dressing to salad, and toss to coat. Cover and refrigerate for 1 hour, and enjoy!

MAKES 4 SERVINGS

HG Tip! To get the pomegranate juice for the dressing from additional pomegranate arils, just place about 1/2 cup of the arils in a food processor, and pulse until juicy. Strain to remove seeds, and measure out 2 tbsp. juice. Easy!
