Ingredients:
1 1/2 tsp. Frank's RedHot Original Cayenne Pepper sauce
2 oz. cooked and chopped skinless chicken breast
1 tbsp. chopped scallions
1 tbsp. blue cheese crumbles
2 slices light bread
2 tbsp. shredded part-skim mozzarella cheese
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Directions:
In a medium bowl, mix hot sauce with 2 tsp. water. Add chicken, scallions, and blue cheese crumbles, and stir to coat.
Evenly top one bread slice with 1 tbsp. mozzarella cheese, the chicken mixture, and the remaining 1 tbsp. mozzarella. Top with remaining bread slice. Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook until bread has lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Mmmm!
