Imagine if a BLT ditched the lettuce, tanned its tomatoes, and shacked up with some smooth Swiss cheese -- that's pretty much what's going on here!

Prep: 5 minutes
Cook: 10 minutes

Ingredients:
1/4 cup chopped onion
1 wedge The Laughing Cow Light Creamy Swiss cheese
1 tbsp. precooked crumbled bacon (like the kind by Oscar Mayer)
2 tsp. chopped bagged sun-dried tomatoes (not packed in oil), or HG Alternative
2 slices light bread
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)

Directions:
Bring a skillet sprayed with nonstick spray to medium-high heat. Add onion, and stirring frequently, cook until browned, about 3 minutes.

Transfer browned onion to a small bowl. Add cheese wedge, bacon, and tomatoes, and stir until evenly mixed.

Evenly top one bread slice with the cheese mixture. Top with the other bread slice. Spread the top of the sandwich with 1 tsp. butter.

Clean skillet. Re-spray and bring to medium heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.

Cook until bread is lightly browned, about 2 minutes per side, flipping carefully. Dig in!



MAKES 1 SERVING

HG Alternative: If you can only find sun-dried tomatoes that are packed in oil, drain and rinse them really well, and then pat dry. This will get rid of excess fat.
