Sometimes, we like to stack a few things we love into a big pile. A big, delicious pile.
Ingredients:
2 frozen meatless hamburger-style patties with about 100 calories each
Three 3/4-inch-thick eggplant slices (about the same size and shape of the patties), patted dry if needed
1/2 cup canned crushed tomatoes
Spices: Italian seasoning
Directions:
Bring a large skillet sprayed with nonstick spray to medium heat on the stove. Working in batches as needed, cook patties and eggplant slices until cooked through, about 5 minutes per side; re-spray skillet between batches.
Meanwhile, to make the sauce, combine tomatoes with 1/4 tsp. Italian seasoning in a microwave-safe bowl. Microwave for 20 seconds, or until hot. Mix well. If you like, add additional Italian seasoning.
Plate one eggplant slice and top with a spoonful of sauce; evenly top with a burger patty and another spoonful of sauce. Alternate layering the remaining eggplant slices and burger patty, adding a spoonful of sauce in between each layer. Cover your "tower" with all of the remaining sauce.
Grab a fork and knife and dig in!
