A decadent dessert to cap off a tasty dinner for two -- just what you ordered!
Ingredients:
4 slices light bread
1/3 cup mashed banana (about 1 extra-small or 1/2 large banana)
1/4 cup canned pure pumpkin
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/4 cup light vanilla soymilk
1 tbsp. brown sugar (not packed)
1/2 tsp. cinnamon
1/4 tsp. vanilla extract
Dash salt
1/4 cup Fat Free Reddi-wip
Directions:
Preheat oven to 350 degrees. Spray two 4-inch ramekins (or oven-safe mugs) with nonstick spray.
Lightly toast bread and cut into bite-sized pieces.
In a large bowl, mix all remaining ingredients except Reddi-wip. Add bread pieces and toss to coat.
Evenly divide mixture between the ramekins. Bake until firm, 20 - 25 minutes.
Top with Reddi-wip and eat up!
