We chopped up some of our favorite fruits and layered 'em with sweet, cinnamon-y, chilled oatmeal. HG tip: Make the oatmeal the night before, and then assemble your parfait the next morning!

Ingredients:
Oatmeal
1/3 cup old-fashioned oats
1 tsp. sugar-free French vanilla powdered creamer
1 no-calorie sweetener packet (like Splenda or Truvia)
1/4 tsp. cinnamon
1/8 tsp. vanilla extract
1/8 tsp. salt

Parfait
1/3 cup pineapple chunks packed in juice, drained and chopped
1/3 cup chopped peaches
1/3 cup chopped strawberries
1/3 cup grapes, halved

Directions:
Combine all oatmeal ingredients in a small nonstick pot. Add 1 cup water.

Bring to a boil, and then reduce to a simmer. Cook and stir until thick and creamy, 4 - 5 minutes.

Transfer to a medium bowl. Cover and refrigerate until chilled, at least 1 1/2 hours.

Stir oatmeal. In a tall glass, layer half of each ingredient: oatmeal, pineapple, peaches, strawberries, and grapes.

Repeat layering with remaining ingredients. Enjoy!
