Lord of the Onion Rings: The Sequel! (3 NEW Recipes!)

It's not that we don't love our original Lord of the Onion Rings anymore -- we're just dressing 'em up a little! Here are THREE new variations on the classic HG swap...

 
 
Hungry Cowgirl Onion Rings

PER SERVING (1/2 of recipe, about 12 rings): 148 calories, 3g fat, 441mg sodium, 34g carbs, 8.5g fiber, 6.5g sugars, 5g protein -- PointsPlus® value 4*

These rootin'-tootin' rings are ready to lasso your taste buds and hog-tie your heart! (Alright, enough cheesy Old West lingo. Time to chew.)




Ingredients:
1 large onion
1/2 cup Fiber One Original bran cereal
1 oz. (about 19) Barbeque Popchips (or another brand of light BBQ-flavored chips)
1 tsp. dried minced onion
1 tsp. dry ranch dip/dressing mix
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 tbsp. BBQ sauce

Directions:
Preheat oven to 375 degrees. Prepare 2 baking sheets (or 1 extra-large sheet) by spraying with nonstick spray; set aside.

Slice the ends off the onion and remove its outer layer. Cut onion into 1/2-inch-wide slices, and separate into about 24 rings. Set aside.

Place cereal, chips, dried minced onion, and ranch mix in a blender or food processor. Grind contents to a breadcrumb-like consistency. Transfer crumbs to a plate and set aside.

Combine egg substitute with BBQ sauce in a small bowl and mix well. One at a time, dunk each ring in egg mixture, give it a shake to remove any excess, and then coat it in the crumb mixture. Evenly place rings on the baking sheet(s).

Bake in the oven until crispy on the outside and soft on the inside, 20 - 25 minutes, carefully flipping rings over about halfway through.

Mexi-licious Onion Loops with Queso Dip

PER SERVING (1/2 of recipe, about 12 rings with 1/3 cup dip): 183 calories, 3g fat, 857mg sodium, 37.5g carbs, 10g fiber, 6.5g sugars, 7.5g protein -- PointsPlus® value 5*

This slightly spicy dish includes its very own dipping sauce. We think of everything...

Ingredients:
Onion Rings
1 large onion
1/2 cup Fiber One Original bran cereal
1 oz. (about 15) low-fat baked tortilla chips (like Guiltless Gourmet)
1 tsp. dry taco seasoning mix
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)

Queso Dip
1/2 cup salsa (not too chunky)
2 wedges The Laughing Cow Light Creamy Swiss cheese

Directions:
Preheat oven to 375 degrees. Prepare 2 baking sheets (or 1 extra-large sheet) by spraying with nonstick spray; set aside.

Slice the ends off the onion and remove its outer layer. Cut onion into 1/2-inch-wide slices, and separate into about 24 rings. Set aside.

Place cereal, chips, and taco seasoning in a blender or food processor. Grind contents to a breadcrumb-like consistency. Transfer crumbs to a plate and set aside.

Fill a small bowl with egg substitute. One at a time, dunk each ring in egg substitute, give it a shake to remove any excess, and then coat it in the seasoned crumbs. Evenly place rings on the baking sheet(s).

Bake in the oven for 20 - 25 minutes, carefully flipping rings over about halfway through.

Meanwhile, in a microwave-safe bowl, combine salsa with cheese wedges, breaking cheese wedges into pieces as you add them. Stir well. Microwave for 45 - 60 seconds, until hot. Thoroughly stir until uniform.

Serve rings with sauce for dunking -- YUM!

Honey Yum Mustard Onion Rings

PER SERVING (1/2 recipe, about 12 rings): 135 calories, 3g fat, 353mg sodium, 31.5g carbs, 8.5g fiber, 6g sugars, 3g protein -- PointsPlus® value 4*

Sweet, tangy, crunchy, and guilt-free! What more could you want from your onion rings?




Ingredients:
1 large onion
1/2 cup Fiber One Original bran cereal
2 1/2 tbsp. yellow cornmeal
1/4 tsp. onion powder, or more to taste
1/8 tsp. garlic powder, or more to taste
1/8 tsp. salt, or more to taste
Dash black pepper, or more to taste
1/4 cup Newman's Own Lite Honey Mustard dressing (or another light honey mustard dressing)
2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
Optional: additional honey mustard dressing, for dipping

Directions:
Preheat oven to 375 degrees. Prepare 2 baking sheets (or 1 extra-large sheet) by spraying with nonstick spray; set aside.

Slice the ends off the onion and remove its outer layer. Cut onion into 1/2-inch-wide slices, and separate into about 24 rings. Set aside.

Using a blender or food processor, grind cereal to a breadcrumb-like consistency. Remove the blender or processor from the base, and add cornmeal and spices. Cover and shake to mix. Transfer contents to a plate and set aside.

Combine dressing with egg substitute in a small bowl and mix well. One at a time, dunk each ring in dressing mixture, give it a shake to remove any excess, and then coat it in the seasoned crumbs. Evenly place rings on the baking sheet(s).

Bake in the oven until crispy on the outside and soft on the inside, 20 - 25 minutes, carefully flipping rings over about halfway through.

If you like, serve with some extra dressing for dipping. (Just don't forget about the extra calories, if you're counting!)
