Frozen waffles aren't just for stacking and slathering with syrup; they can be an essential part of savory breakfast recipes too. And we've got the evidence to prove it! Look for low-fat waffles with about 160 calories per 2-waffle serving; we love Eggo Nutri-Grain Low Fat whole-wheat waffles (only 70 calories per waffle!). And now, the recipes...

 
 
In Your Face! Breakfast Waffle

PER SERVING (entire recipe): 227 calories, 10g fat, 624mg sodium, 19.5g carbs, 2g fiber, 4g sugars, 13.5g protein -- PointsPlus® value 6*

The stats for this cheesy, eggy, bacon-y waffle breakfast are almost too good to be true... MAKE THIS SOON!!!




Ingredients:
1 slice center-cut bacon or turkey bacon
1 wedge The Laughing Cow Light Creamy Swiss cheese
1/2 tsp. dried minced onion
1 large egg
1 frozen low-fat waffle
2 slices tomato

Directions:
Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add bacon and cook until crispy, about 4 minutes per side.

Remove bacon and set aside. Once cool enough to handle, chop or crumble and place in a bowl. Add cheese and onion to the bowl, and mix thoroughly. Set aside.

If needed, clean and dry skillet. Re-spray skillet and return to medium heat. Add egg and cook per your preference (we like it over medium!), about 2 minutes.

Meanwhile, toast the waffle and place on a plate. Spread bacon-cheese mixture on the waffle, and lay cooked egg on top. Lay tomato slices over the egg (or just serve them on the side).

Grab a knife 'n fork and go nuts!

Foxy Lox-Topped Waffle

PER SERVING (entire recipe): 165 calories, 3.5g fat, 880mg sodium, 20.5g carbs, 2.5g fiber, 4.5g sugars, 13.5g protein -- PointsPlus® value 4*

Ingredients:
1 frozen low-fat waffle
1 tbsp. fat-free cream cheese
1 1/2 oz. smoked salmon
2 slices tomato
2 thinly sliced rings red onion

Directions:

Toast waffle according to your preference. (We like ours golden brown!)

Plate waffle and spread with cream cheese. Evenly top with salmon, tomato, and onion.

Pick it up and bite right in!

Hungry Grilled Ham 'n Cheese Waffle 'Wich

PER SERVING (entire recipe): 242 calories, 6g fat, 970mg sodium, 33.5g carbs, 3.5g fiber, 5g sugars, 14g protein -- PointsPlus® value 6*

Ham and cheese are a classic combination -- but when paired with buttery WAFFLES, things get a little crazy. Crazy AMAZING!!!



Ingredients:
2 low-fat waffles, thawed from frozen
1 oz. sliced 97 - 98% fat-free ham (about 2 slices)
1 slice fat-free American cheese
1/2 tbsp. light whipped butter or light buttery spread (like Brummel and Brown), room temperature

Directions:
Evenly top one waffle with ham. Lay cheese slice over the ham and cover with the other waffle. Set aside.

Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add butter and allow it to coat the bottom of the skillet.

Gently place sandwich in the skillet and cook until lightly browned on the outside and hot on the inside, about 2 minutes per side, flipping carefully with a spatula.

Serve and enjoy!
