Low-Calorie Easy Microwave Recipes: Breakfast Sandwich, BBQ Chicken Stuffed Potato

Presto! Breakfast Sandwich

Entire recipe: 187 calories, 1g fat, 857mg sodium, 25.5g carbs, 5g fiber, 5g sugars, 21g protein -- PointsPlus® value 5*

There's no excuse to skip b-fast when it's THIS easy and delicious!

Ingredients:
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
Dash each salt and black pepper
One 100-calorie flat sandwich bun (like Arnold/Brownberry/Oroweat Sandwich Thins)
1 slice fat-free American cheese
Optional topping: ketchup

Directions:
To make the egg patty, spray a medium microwave-safe bowl with nonstick spray. (The bottom of the bowl should be about the size of the sandwich bun.) Add egg substitute, salt, and pepper. Microwave for 1 minute.

Gently stir, and microwave for 1 more minute.

Place one half of the bun on a microwave-safe plate. Top with egg patty, followed by cheese. Top with the other half of the bun.

Microwave for 20 seconds, or until cheese has melted. Eat up!

MAKES 1 SERVING

Fun Variations! Try it on a light bagel instead of a bun. Add some crispy center-cut bacon or turkey bacon! Use a wedge of The Laughing Cow Light cheese instead of a slice of American. Layer on some spinach leaves and sun-dried tomatoes! Mmmm...

 
 
 
BBQ Chicken Stuffed Potato

Entire recipe: 310 calories, 1.5g fat, 774mg sodium, 49.5g carbs, 3g fiber, 10.5g sugars, 24g protein -- PointsPlus® value 8*

We enjoy a potato every now and then... This one's stuffed with BBQ chicken, cheese, and more!

Ingredients:
One 10-oz. russet potato
2 oz. cooked and shredded (or finely chopped) skinless chicken breast
2 tbsp. BBQ sauce with 45 calories or less
1 tbsp. chopped cilantro
Dash each salt and black pepper
Dash garlic powder
2 tbsp. shredded fat-free cheddar cheese
1 tbsp. fat-free sour cream
1 tbsp. chopped scallions

Directions:
Pierce potato several times with a fork. On a microwave-safe plate, microwave for 3 1/2 minutes.

Flip potato, and microwave for 3 1/2 more minutes, or until soft.

In a medium microwave-safe bowl, toss chicken with BBQ sauce. Microwave for 1 minute, or until warm. Stir in cilantro.

Slice off a 2-inch-wide strip of potato skin, lengthwise, from the top of the potato. Scoop out the insides, transfer to a medium bowl, and break up with a fork.

Discard half of the potato pulp (or reserve for another use). To the remaining pulp in the bowl, add salt, pepper, and garlic powder, and mix well.

Scoop seasoned pulp into the hollowed-out potato. Evenly top with chicken mixture, and sprinkle with cheese.

On the microwave-safe plate, microwave for 1 minute, or until entire potato is hot and cheese has melted.

Top with sour cream and scallions, and enjoy!

MAKES 1 SERVING

Fun Variations! Toss your chicken with some Frank's RedHot in place of BBQ sauce, and use a little blue cheese instead of cheddar for a Buffalo Chicken Stuffed Potato. Or heat up some frozen veggies, and coat 'em in low-fat marinara for an Italian-Style Veggie Stuffed Potato! 

 
 
 
Cherry-Picked Fake-Baked Apple

Entire recipe: 115 calories, <0.5g fat, 27mg sodium, 31g carbs, 4.5g fiber, 22.5g sugars, 0.5g protein -- PointsPlus® value 3*

This no-bake treat has maraschino cherries inside... FUN!!!

Ingredients:
1 medium Rome or Braeburn apple
2 maraschino cherries
1/2 cup diet cherry-vanilla cream soda (like the kind by Hansen's or Blue Sky)
Half of a no-calorie sweetener packet (like Splenda or Truvia)
Dash cinnamon

Directions:
Core apple. Place in a deep, medium-sized microwave-safe bowl. Place cherries in the cored center of the apple. Pour soda over the apple, and sprinkle with sweetener and cinnamon.

Cover and microwave for 4 minutes, or until tender.

Enjoy hot, warm, or cold!

MAKES 1 SERVING

Fun Variations! Try it with a pear and diet black cherry soda. Stuff your apple with raisins instead of maraschino cherries! Use diet cream soda, and season with pumpkin pie spice. So many great options...
