Appy Holidays! (New Party-Food Recipes)

It's holiday time, which means it's PARTY time! We've got some great new appetizer recipes -- ready to infuse some guilt-free deliciousness into your next soiree!

 
 
Spicy Asian Meatballs

1/8th of recipe (3 meatballs in sauce): 101 calories, 2.5g fat, 571mg sodium, 6g carbs, <0.5g fiber, 5g sugars, 12.5g protein -- PointsPlus® value 2*

These savory things are hot, tangy, and CRAZY tasty -- make sure your guests know that these pack some serious heat, 'cuz they do!

Ingredients:
Meatballs
1 lb. raw extra-lean ground beef (4% fat or less)
1/2 cup thinly sliced scallions
2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
1 tbsp. reduced-sodium/lite soy sauce
2 tsp. chopped garlic
1 1/2 tsp. chopped ginger
1/4 tsp. salt
1/8 tsp. black pepper

Sauce
1/4 cup Asian-style chili garlic sauce
2 tbsp. seasoned rice vinegar
1 1/2 tbsp. hoisin sauce
2 tsp. brown sugar (not packed)

Directions:
Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray.

Thoroughly mix meatball ingredients in a large bowl. Firmly and evenly form into 24 meatballs, and place them on the baking sheet, evenly spaced.

Bake for 10 minutes.

Gently flip meatballs. Bake until cooked through, about 5 minutes.

Meanwhile, place sauce ingredients in another large bowl, and whisk until uniform.

Add cooked meatballs to the sauce in the large bowl, and gently toss to coat. Enjoy!

Easy Creamy Bruschetta

1/4th of recipe (4 pieces): 77 calories, 1.5g fat, 207mg sodium, 12.5g carbs, 3g fiber, 3g sugars, 4g protein -- PointsPlus® value 2*

Need a quickie starter for a dinner party? These toasty bites are SO easy to make and SO delicious...

Ingredients:
4 slices light bread
2 wedges The Laughing Cow Light Creamy Swiss cheese
1 cup seeded diced tomato
1/4 cup finely chopped sweet onion
1 tbsp. chopped fresh basil
1/2 tsp. chopped garlic

Directions:
Lightly toast bread. Cut each slice into 4 squares, for a total of 16 squares.

In a medium bowl, stir cheese wedges until smooth. Add tomato, onion, basil, and garlic. Stir gently to coat with cheese.

Evenly distribute mixture among the toast squares. Enjoy!
