Italian Potato Skins

1/2 of recipe (2 skins): 186 calories, 3.5g fat, 335mg sodium, 29g carbs, 3.5g fiber, 3.5g sugars, 10.5g protein -- PointsPlus® value 5*

How have we not tried this sooner?! Simple, delicious, hot 'n cheesy... These skins RULE!

Ingredients:
Two 10-oz. baking potatoes
2 sticks light string cheese
1/3 cup low-fat marinara sauce
Seasonings: garlic powder, Italian seasoning (optional)

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Pierce potatoes several times with a fork. On a microwave-safe plate, microwave potatoes for 3 1/2 minutes.

Flip potatoes, and microwave for 3 1/2 more minutes, or until soft.

Once cool enough to handle, cut potatoes in half lengthwise. Use a spoon to gently scoop out the pulp, leaving about 1/4 inch inside the skin. Discard the potato pulp (or reserve for another use).

Place potato skins on the baking sheet. Bake until crispy, 12 - 15 minutes. Remove sheet, but leave oven on.

Meanwhile, break string cheese into thirds and place in a blender or food processor -- blend at high speed until shredded. (Or pull into shreds and roughly chop.)

Evenly distribute sauce among potato skins. Sprinkle with 1/4 tsp. garlic powder and, if you like, some Italian seasoning.

Sprinkle with shredded string cheese. Bake until cheese has melted, about 5 minutes. Mmmm!

Crazy-Cheesy Cauliflower Mash

1/2 of recipe (about 3/4 cup): 120 calories, 3g fat, 539mg sodium, 15.5g carbs, 5.5g fiber, 6g sugars, 7.5g protein -- PointsPlus® value 3*

Like cheesy mashed potatoes, minus loads of fat and starchy carbs! Open up and say YUM...

Ingredients:
4 cups frozen cauliflower florets
2 wedges The Laughing Cow Light Creamy Swiss cheese
2 tbsp. reduced-fat Parmesan-style grated topping
Seasonings: black pepper, salt, garlic powder, onion powder

Directions:
Place cauliflower in a large microwave-safe bowl; cover and microwave for 3 1/2 minutes.

Uncover and stir. Re-cover and microwave for another 3 1/2 minutes, or until hot and soft.

Drain excess liquid. Add cheese wedges, breaking them into pieces, and Parm-style topping. Add a dash of pepper and 1/8 tsp. each salt, garlic powder, and onion powder. Thoroughly mash and mix. Enjoy!

Two-Cheese Taquitos

1/4th of recipe (2 taquitos): 158 calories, 3g fat, 363mg sodium, 21.5g carbs, 2g fiber, 2g sugars, 8.5g protein -- PointsPlus® value 4*

Great as a hot snack or party app, these crunchy cheesy eats put freezer-aisle versions to shame!

Ingredients:
Eight 6-inch yellow corn tortillas
4 wedges The Laughing Cow Light Creamy Swiss cheese
1/2 cup shredded fat-free cheddar cheese
Optional dip: salsa

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Place tortillas between 2 damp paper towels. Microwave for 1 minute, or until warm and pliable.

One at a time, spread each tortilla with half of a cheese wedge and sprinkle with 1 tbsp. shredded cheese. Tightly roll up into a tube, place on the baking sheet, seam side down, and secure with toothpicks (if needed).

Bake until crispy, 14 - 16 minutes. (Don’t worry if they crack a little.) Enjoy!
