Low-Calorie Grilled Cheese Recipes: Caramelized-Onion Grilled Cheese, Grilled Cheese Club Sandwich

Today is Valentine's Day. And because we love you, and you LOVE grilled cheese, here are two new recipes for guilt-free grilled cheese!

 
 
Caramelized-Onion Grilled Cheese

Entire recipe: 285 calories, 8.5g fat, 815mg sodium, 36g carbs, 7g fiber, 10g sugars, 16g protein -- PointsPlus® value 7*

HUNGRY GIRL ALERT! This flavor-packed, cheesed-up sandwich is an absolute MUST-TRY! Instant classic...

Ingredients:
1 stick light string cheese
1 cup diced sweet onion
Dash each salt and black pepper
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 slices light bread
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)

Directions:
Break string cheese into thirds and place in a blender or food processor -- blend at high speed until shredded. (Or pull into shreds and roughly chop.)

Bring a skillet sprayed with nonstick spray to medium-low heat. Add onion, and sprinkle with salt and pepper. Stirring frequently, cook until caramelized, about 20 minutes.

Transfer caramelized onion to a medium bowl. Add cheese wedge, and stir until softened and mixed. Stir in shredded string cheese.

Evenly top one bread slice with the onion-cheese mixture. Top with the other bread slice. Spread the top of the sandwich with 1 tsp. butter.

Clean skillet. Re-spray and bring to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.

Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Dig in!

Club-Style Grilled Cheese

Entire recipe: 250 calories, 10g fat, 991mg sodium, 23.5g carbs, 6g fiber, 5g sugars, 13.5g protein -- PointsPlus® value 6*

It's like a cheesy club sandwich, but without any turkey slices. We like to call it the "No Turkeys Allowed" Club (although turkey sometimes sneaks in disguised as bacon)...

Ingredients:
1 slice center-cut bacon or turkey bacon
2 wedges The Laughing Cow Light Creamy Swiss cheese
2 tsp. Hellmann's/Best Foods Dijonnaise
2 slices light bread
1 large tomato slice
5 spinach leaves
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)

Directions:
Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)

In a small bowl, combine cheese wedges with Dijonnaise, and stir until smooth.

Lay bread slices flat, and spread them with the cheese mixture. Crumble or chop bacon, and sprinkle over one slice of bread. Top that slice with tomato, spinach, and the other bread slice, cheesy side down. Spread the top of the sandwich with 1 tsp. butter.

Bring a skillet sprayed with nonstick spray to medium-high heat. Carefully place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.

Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully. Eat up!
