Does this email really need an introduction? We put cheeseburger flavor in unexpected places. And now those places are more awesome than ever. Read 'n chew!

Cheeseburger-Stuffed Mushrooms

1/2 of recipe (1 stuffed mushroom): 226 calories, 4g fat, 776mg sodium, 20.5g carbs, 3g fiber, 11g sugars, 26g protein -- PointsPlus® value 5*

Combining two things we love doesn't always work. (We're looking at you, pumpkin and sauerkraut.) But portabella mushrooms crammed with cheeseburger goodness are one wildly successful combo!

Ingredients:
1 1/2 tbsp. Hellmann's/Best Foods Dijonnaise
1 1/2 tbsp. ketchup
2 large portabella mushrooms, stems chopped and reserved
6 oz. raw extra-lean ground beef (4% fat or less)
3/4 cup diced onion
1/2 tsp. garlic powder
1/8 tsp. each salt and black pepper
2 slices fat-free American cheese
1/4 cup diced tomato
Optional topping: dill pickle chips

Directions:
Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.

To make the sauce, in a small bowl, mix Dijonnaise with ketchup until uniform.

Place mushroom caps on the sheet, rounded sides down. Bake until tender, about 15 minutes. Remove sheet, but leave oven on.

Meanwhile, bring a skillet sprayed with nonstick spray to medium-high heat. Add beef, onion, and chopped mushroom stems. Sprinkle with garlic powder, salt, and pepper. Cook and crumble for 5 - 7 minutes, until beef is fully cooked and onion is slightly browned.

Blot away excess moisture from mushroom caps. Divide beef mixture between the caps, and top each cap with a slice of cheese.

Bake until cheese has melted, about 1 minute.

Drizzle with sauce, sprinkle with tomato, and dig in!

Cheeseburger Fillo Bites

1/3rd of recipe (5 fillo shell bites): 126 calories, 4g fat, 395mg sodium, 16g carbs, 1.5g fiber, 2g sugars, 8.5g protein -- PointsPlus® value 3*

Adorable mouthfuls of cheeseburger flavor that crunch when you bite 'em... Sounds like a party! Did we mention these are meat-free? 'Cuz they are!

Ingredients:

15 frozen mini fillo shells (like the kind by Athens)
1/4 cup finely chopped onion
2/3 cup frozen ground-beef-style soy crumbles (like the kind by Boca or MorningStar Farms)
2 wedges The Laughing Cow Light Creamy Swiss cheese
2 tsp. ketchup
2 tsp. mustard
2 tbsp. finely chopped dill pickle

Directions:
Preheat oven to 350 degrees.

Place shells on a baking sheet, and bake until lightly browned and crispy, 3 - 5 minutes.

Bring a skillet sprayed with nonstick spray to medium heat. Cook and stir onion until softened, about 4 minutes. Add soy crumbles, and cook and stir until hot, about 2 minutes.

Transfer to a medium bowl. Add cheese wedges, breaking them into pieces, and stir until uniform.

Evenly distribute mixture among the fillo shells.

Top with ketchup, mustard, and pickle. Eat up!

It's National Potato Chip Day, March 14th. Potato chips, incidentally, go GREAT with cheeseburgers... Just stick with guilt-free chippies, like Kettle Brand Bakes. SO GOOD!
