Cheesy Tuna Lettuce Cups

Entire recipe: 149 calories, 3.5g fat, 525mg sodium, 7.5g carbs, 2.5g fiber, 4g sugars, 21g protein -- PointsPlus® value 3*

While we're not above eating tuna straight out of the pouch, sometimes we need to jazz things up a bit. This simple snack is shockingly impressive!

Ingredients:
One 2.6-oz. pouch StarKist Albacore White Tuna in Water
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tbsp. diced red bell pepper
1 tbsp. diced red onion
3 medium lettuce leaves
3 tomato slices

Directions:
In a medium bowl, mix tuna with cheese until uniform. Stir in red pepper and onion.

Top each lettuce leaf with a tomato slice. Evenly distribute tuna mixture among the leaves.

MAKES 1 SERVING 

 
 
 
Creamy Fruit Salad Supreme

1/2 of recipe (about 1 1/3 cups): 148 calories, 0g fat, 43mg sodium, 28.5g carbs, 1g fiber, 24.5g sugars, 9g protein -- PointsPlus® value 4*

Sweet Greek yogurt and a couple of fantastic fruits... What more could you ask for?!

Ingredients:
6 oz. (about 2/3 cup) plain fat-free Greek yogurt (like the kind by Fage or Chobani)
1 no-calorie sweetener packet (like Splenda or Truvia)
1 cup seedless red grapes, halved
2/3 cup canned pineapple chunks packed in juice, drained

Directions:
In a medium-large bowl, stir sweetener into yogurt. Add fruit, and stir to coat. Eat up!

Pepperoni Cheese Toast

Entire recipe: 114 calories, 4.5g fat, 562mg sodium, 11.5g carbs, 2.5g fiber, 2.5g sugars, 9g protein -- PointsPlus® value 3*

To feed a craving for meat 'n cheese at a moment's notice, put together this too-easy creation!

Ingredients:
1 slice light bread
1 slice 2% milk American cheese
4 slices turkey pepperoni (Hormel's is the best!)

Directions:
Top bread with cheese, followed by pepperoni. Place in a toaster oven, and toast until bread is lightly browned, cheese has melted, and pepperoni is hot, 2 - 4 minutes. Enjoy!!!

MAKES 1 SERVING

HG Alternative: No toaster oven? Just toast the bread in a regular toaster, and then top with cheese and pepperoni. Microwave until cheese has melted and pepperoni is hot, about 15 seconds.
