Dude Food! (Father's Day Recipes)

In honor of Father's Day (this Sunday, June 16th), we've whipped up a couple of decadent recipes that dads will LOVE... guilt-free, of course! Bring on the meat and cheese...

 
 
Spicy Asian Pork Tenderloin

1/4 of recipe (about 3.25 oz. cooked pork with 2 tbsp. sauce): 191 calories, 4g fat, 555mg sodium, 13g carbs, <0.5g fiber, 9g sugars, 24g protein -- PointsPlus® value 5*

Ingredients:
Marinade
2 tbsp. reduced-sodium/lite soy sauce
1 tbsp. sweet Asian chili sauce
2 tsp. chopped garlic
1 tsp. chopped ginger
1 tsp. crushed red pepper flakes

Pork
One 1-lb. raw pork tenderloin, trimmed of excess fat

Sauce
2 tsp. cornstarch
3 tbsp. sweet Asian chili sauce
1 1/2 tbsp. seasoned rice vinegar
1 tsp. chopped garlic
1/4 tsp. crushed red pepper flakes
2 tbsp. thinly sliced scallions

Optional topping: extra thinly sliced scallions

Directions:
In a small bowl, combine marinade ingredients; stir until uniform. Place pork and marinade in a large sealable plastic bag; remove as much air as possible and seal. Gently knead marinade into meat through the bag. Refrigerate for 1 hour.

Preheat oven to 425 degrees.

Bring a large oven-safe skillet sprayed with nonstick spray to high heat on the stove. Add pork and discard excess marinade. Evenly sear meat, rotating it occasionally, until dark on all sides, about 4 minutes total.

Place skillet in the oven and bake for 10 minutes.

Carefully flip pork. Bake until pork center reaches 145 degrees, 5 - 10 more minutes.

Remove pork from the skillet and let rest for 10 minutes.

Meanwhile, to make the sauce, combine cornstarch with 1/4 cup water in a small nonstick pot. Stir to dissolve. Add remaining sauce ingredients except scallions and stir well. Set heat to medium. Stirring frequently, cook until sauce has thickened, 6 - 8 minutes. Remove from heat, and stir in scallions.

Slice pork, and serve with sauce!

MAKES 4 SERVINGS

HG Tip! If you're not sure if the skillet handle is oven-safe, wrap it in aluminum foil first.  

 
 
 
Cheeseburger Tostadas

1/2 of recipe (1 tostada): 180 calories, 5g fat, 630mg sodium, 22g carbs, 4g fiber, 5g sugars, 11g protein -- PointsPlus® value 4*

Can't decide between burgers and Mexican food? With this no-guilt dish, you don't have to!

Ingredients:
Two 6-inch corn tortillas
1 meatless hamburger-style patty with 100 calories or less (like Boca Original Vegan Veggie/Meatless Burger)
1/2 cup chopped onion
2 slices 2% American cheese
1/2 cup shredded lettuce
1/4 cup chopped tomatoes
1 tsp. ketchup
1 tsp. mustard
1 tbsp. chopped pickles

Directions:
Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.

Lay tortillas flat on the sheet, and spray with nonstick spray.

Bake for 5 minutes.

Carefully flip tortillas, and bake until crispy, 3 - 5 minutes.

Bring a skillet sprayed with nonstick spray to medium heat. Cook burger patty for about 4 minutes per side, until cooked through.

Set burger aside to cool. Remove skillet from heat, re-spray, and bring to medium heat. Add onion, and cook and stir until softened, about 4 minutes.

Transfer onion to a medium microwave-safe bowl. Chop burger patty and tear cheese slices into pieces. Add both to the bowl. Microwave for 30 seconds, or until cheese has melted. Mix thoroughly.

Evenly top tortillas with lettuce, followed by burger mixture.

Top with remaining ingredients, and devour!
