Hungry Girl's Creamy Crab B-fast Bruschetta
Creamy Crab B-fast Bruschetta

There are no words to describe how indulgently delicious these seafood-topped toasts are. Try them and see if YOU can come up with words that do them justice!


Prep: 5 minutes
Cook: 5 minutes or less

Ingredients:
3/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1 tbsp. fat-free half & half
1/4 tsp. garlic powder
2 oz. roughly chopped imitation crabmeat or high-quality real crabmeat
2 tbsp. canned fire-roasted diced tomatoes, drained
2 wedges The Laughing Cow Light Creamy Swiss cheese
8 pieces Old London Classic Melba Toast

Directions:
In a large microwave-safe mug sprayed with nonstick spray, combine egg substitute, half & half, and garlic powder. Mix well. Microwave for 1 1/2 minutes.

Stir in crab, tomatoes, and cheese wedges, breaking the cheese wedges into pieces. Microwave for 1 minute, or until set.

Stir well, and distribute over Melba Toast. Enjoy!

Hungry Girl's Sweet 'n Cheesy Apple Flatbread
Sweet 'n Cheesy Apple Flatbread

1/4th of recipe (2 pieces): 84 calories, 2.5g fat, 205mg sodium, 10.5g carbs, 2.5g fiber, 4.5g sugars, 5g protein -- PointsPlus® value 2*

Savory with a fruity twist, this yummy treat only looks schmancy... It's a cinch to whip up. If we said this recipe was flat-out fabulous, would you call the Pun Police on us?

Prep: 5 minutes
Cook: 15 minutes

Ingredients:
1 high-fiber flatbread (or medium-large tortilla) with 110 calories or less (like Flatout Light)
2 wedges The Laughing Cow Light Creamy Swiss cheese
3/4 cup thinly sliced Fuji apple (about half of a medium apple)
1/4 cup shredded part-skim mozzarella cheese
3 tbsp. balsamic vinegar

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Lay flatbread on the baking sheet, and spread with cheese wedges. Evenly top with apple, and sprinkle with shredded cheese.

Bake until shredded cheese has melted and flatbread has lightly browned, 10 - 12 minutes.

Meanwhile, add vinegar to a small nonstick pot, and set heat to medium high. Bring to a boil, and then reduce to a simmer. Stirring frequently, cook until thickened and reduced to about 1/3rd of its original amount, about 2 minutes.

Drizzle vinegar over flatbread, evenly slice into 8 pieces, and enjoy!
