A Perfect Pancake Recipe and Eating Smart on Vacation!

I love the decadent pancake recipes you've come up with over the years. Sometimes I like to keep things simple, though. Do you have a basic pancake recipe without any toppings or filling?

Yay, glad you love them! Since loaded pancake stacks are generally SO high in calories, we're all about re-creating them guilt-free. But like you said, sometimes you just want hot and fluffy pancakes minus all the indulgent stuff. So here's a recipe for those tasty p-cakes themselves... Not only are they low in calories and fat, but they're also PACKED with fiber and protein!

HG's Perfect Pancake Duo

Entire recipe (2 pancakes): 180 calories, 1g fat, 515mg sodium, 32g carbs, 5g fiber, 1g sugars, 11.5g protein -- PointsPlus® value 4*

1/3 cup whole-wheat flour
1/2 tsp. baking powder
1 no-calorie sweetener packet (like Splenda or Truvia)
Dash salt
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/8 tsp. vanilla extract
Optional: cinnamon

In a medium bowl, mix flour, baking powder, sweetener, and salt. If you like, add a dash of cinnamon. Stir in egg substitute, vanilla extract, and 1/4 cup water.

Bring a skillet sprayed with nonstick spray to medium-high heat. Add half of the batter to form a large pancake. Cook until pancake begins to bubble and is solid enough to flip, 2 - 3 minutes. Gently flip and cook until both sides are lightly browned and inside is cooked through, 1 - 2 minutes.

Plate your pancake. Remove skillet from heat, re-spray, and return to medium-high heat. Repeat with remaining batter to make a second pancake. Enjoy!


P.S. If you want to dress up your pancakes a bit, stock up on low-sugar preserves, light whipped butter or light buttery spread, sugar-free pancake syrup (careful... light syrup is still pretty high in calories), powdered sugar and, of course, lots of fresh fruit! I know just how you feel. It's a lot easier to maintain smart eating habits at home than it is while vacationing. Here are some of my best tips and tricks to avoid diet sabotage on your trip...

Do your research. If your hotel doesn't have any decent breakfast options, see what's available at the place next door. Find out if your room has a mini fridge or if one's available -- then you can stock it with smart snacks, like fat-free or low-fat yogurt, cut veggies, and light string cheese. If you're on a cruise, ask in advance if special requests can be accommodated. You get the picture!

Embrace the 80/20 rule. I live by this philosophy -- eating smart 80 percent of the time and loosening the reins during the other 20 percent. This is especially helpful come vacation time. It's natural to want to indulge a bit when you're away someplace special. So if you want to share that tiramisu with your family at lunch or have a tropical cocktail with dinner, do it! Just make really good choices for the rest of the day.

Make daily activity a part of your trip. One way to counteract extra calorie intake? Get in some extra exercise! Go for a morning walk or jog each day, and take advantage of any fun vacation activities like swimming, hiking, and exploring.

Don't sweat the small stuff. Staying on top of calorie counts while you're out of town is tough, so try not to stress out too much. You're on vacation, after all, so enjoy it! Then, when you return, jump right back into your routine.
