There's no shortage of chocolate research taking place, and the latest discoveries have got us CHOC-full of excitement! First up, chemists in the UK have been working on a new technique that replaces some of the cocoa butter and milk fats in chocolate with droplets of fruit juice. The method reportedly preserves the chocolate's texture while cutting the fat content by HALF. We want to see this stuff on shelves soon! But according to this next bit of info, chocolate makers might wanna be careful how they market the stuff. A recent study found that labeling chocolate as "reduced-fat" tends to significantly turn off consumers. Subjects had much lower expectations of chocolates labeled reduced-fat than they had of identical, unlabeled varieties. You're missing out, skeptics -- Hershey's Simple Pleasures reduced-fat chocolates ROCK! And last but not least, new research suggests that chocolate bears a chemical similarity to a common mood-stabilizing medication. One prescription for M&M's, coming up. (Ha! We wish...)
