  Super-Stuffed Spinach-Feta Mushrooms

Make these tasty treats for unexpected guests... or just for yourself, if you're craving mushrooms packed with goodies!


12 medium baby bella mushrooms (each about 2 inches wide)
One 10-oz. package frozen chopped spinach, thawed and squeezed dry
1/2 cup crumbled reduced-fat feta cheese
Spices: garlic powder, onion powder, salt, black pepper

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray and set aside.

Remove mushroom stems and set aside. Place mushroom caps on the baking sheet, rounded sides down. Bake in the oven until slightly softened, 12 - 14 minutes. Leave oven on.

Meanwhile, chop mushroom stems. Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add stems and cook and stir until soft, about 3 minutes.

Place cooked stems in a medium bowl. Add spinach, cheese, 1/2 tsp. garlic powder, 1/2 tsp. onion powder, 1/4 tsp. salt, and 1/4 tsp. pepper. Mix thoroughly.

Pat mushroom caps with paper towels to remove excess moisture. Evenly distribute spinach mixture among the caps, about 2 tablespoons each. Bake in the oven until filling is hot, 8 - 10 minutes. Enjoy!


  Cran-tastically Easy Meatballs

PER SERVING (1/5th of recipe, 4 meatballs): 221 calories, 7.5g fat, 688mg sodium, 15g carbs, 0.5g fiber, 11g sugars, 22g protein -- PointsPlus® value 6*

These meatballs work fantastically well as an appetizer, a snack, or part of a meal -- and they're super-simple to make!

1 1/4 lbs. raw lean ground turkey
1/2 cup chili sauce (like the kind by Heinz, stocked near the ketchup)
1/3 cup sweetened dried cranberries, roughly chopped
Spices: salt, black pepper


Preheat oven to 350 degrees. Spray a baking sheet with nonstick spray and set aside.

In a large bowl, combine turkey, chili sauce, chopped cranberries, 1/2 tsp. salt, and 1/4 tsp. pepper. Mix thoroughly with your hands. Firmly and evenly form into 20 balls and place on the baking sheet, evenly spaced.

Bake in the oven for 10 minutes. Gently flip meatballs and bake until cooked through, about 5 more minutes. Serve and enjoy!


  Crunchy Candy Cane Snack-wiches

3 mini candy canes or 1/2 standard-sized candy cane, lightly crushed
1/2 cup Cool Whip Free, thawed
32 chocolate-flavored mini rice cakes (like Quaker Chocolate Popped Rice Snacks)

To make the filling, gently stir crushed candy cane(s) into Cool Whip in a small bowl. Lay 16 mini rice cakes on a plate, and evenly distribute filling among them, about 1/2 tablespoon each.

Lightly place another rice cake over each filling-topped cake to form 16 sandwiches. Freeze until filling is firm, at least 1 hour. Yum!
