Caramelized Onion Fillo Bites

Start out with something creamy, crunchy, and savory. This appetizer will definitely get you in the mood... you know, for dinner!

2 cups chopped sweet onion (about 1 large onion)
1 tsp. chopped garlic
1/4 tsp. salt
1/8 tsp. cayenne pepper
3 wedges The Laughing Cow Light Creamy Swiss cheese, room temperature
10 frozen mini fillo shells (like the kind by Athens)

Preheat oven to 375 degrees.

Bring a large skillet sprayed with nonstick spray to medium-high heat. Add onion, garlic, salt, and cayenne pepper. Cook and stir until slightly softened, 3 - 5 minutes.

Reduce heat to medium low. Stirring frequently to ensure onion doesn't burn, cook until browned and caramelized, 20 - 25 minutes.

Transfer onion to a bowl. Add cheese wedges, breaking them into pieces, and stir until melted and evenly mixed.

Place shells on a baking sheet and evenly distribute onion mixture among them.

Bake until shells are lightly browned, about 8 minutes. Enjoy!


Sweet 'n Spicy Berry-yaki Chicken

The sweetness of raspberry and the smokiness of chipotle meld into one seriously delicious sauce. Mmmmm...

2 tbsp. low-sugar raspberry preserves
1 tbsp. thick teriyaki marinade or sauce
1 tsp. adobo sauce and 1 tsp. chopped chipotle pepper (previously packed in adobo sauce)
8 oz. raw boneless skinless chicken breast, cubed
1/8 tsp. each salt and black pepper
1 cup sliced mushrooms
1 cup chopped bell pepper (about 1 pepper)
1/4 cup chopped scallions

In a wide bowl, whisk preserves, teriyaki marinade or sauce, and adobo sauce until smooth. Mix in 1/4 cup of water.

Season chicken with salt and black pepper, add to the bowl, and stir to coat. Cover and marinate in the fridge for 15 minutes.

Bring a skillet or wok sprayed with nonstick spray to medium-high heat. Cook and stir mushrooms and bell pepper until slightly softened, about 4 minutes.

Add chicken, marinade mixture, and chipotle pepper. Cook and stir for 6 - 8 minutes, or until chicken is fully cooked.

Serve topped with scallions and enjoy!


Bananarama Pumpkin Bread Pudding

PER SERVING (1 ramekin or mug): 181 calories, 1g fat, 345mg sodium, 36g carbs, 7g fiber, 14.5g sugars, 10g protein -- PointsPlus® value 5*

A decadent dessert to cap off a tasty dinner for two -- just what you ordered!

4 slices light bread
1/3 cup mashed banana (about 1 extra-small or 1/2 large banana)
1/4 cup canned pure pumpkin
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/4 cup light vanilla soymilk
1 tbsp. brown sugar (not packed)
1/2 tsp. cinnamon
1/4 tsp. vanilla extract
Dash salt
1/4 cup Fat Free Reddi-wip

Preheat oven to 350 degrees. Spray two 4-inch ramekins (or oven-safe mugs) with nonstick spray.

Lightly toast bread and cut into bite-sized pieces.

In a large bowl, mix all remaining ingredients except Reddi-wip. Add bread pieces and toss to coat.

Evenly divide mixture between the ramekins. Bake until firm, 20 - 25 minutes.

Top with Reddi-wip and eat up!
