What's NOT to love about salsa? It's delicious, it goes with almost everything, and it's naturally low in calories! We've got a super-delicious new recipe, plus the scoop on the best salsas around!
Peachy-Keen Black Bean Soup

PER SERVING (1/8th of recipe, about 1 cup): 151 calories, 0.5g fat, 610mg sodium, 27g carbs, 7.25g fiber, 5g sugars, 7g protein -- PointsPlus® value 3*

We're calling this soup "Peachy-Keen," but the recipe can be made with any fruity salsa. We're sure you'll agree that Pineappley-Keen doesn't have quite the same ring to it...

Three 15-oz. cans black beans, rinsed and drained
4 1/2 cups (36 oz.) fat-free chicken or vegetable broth
One 12-oz. jar peach salsa (like Trader Joe's Spicy, Smoky, Peach Salsa) or another fruity, tomato-based salsa
1 tsp. cumin
Optional toppings: fat-free sour cream, chopped cilantro, lime wedges

Pour about half of the rinsed and drained beans into a blender. Add around half of the broth, half of the salsa, and half of the cumin (no need to be exact). Blend until mixture is smooth and fully pureed, and then transfer it to a large container with a lid.

Repeat blending process with remaining ingredients (excluding optional toppings, of course). Add that batch to the container, and give the mixture a good stir.

Cover and refrigerate for at least 1 hour (several hours is best), to allow soup to thicken and flavors to blend.

Once you're ready to serve, stir soup thoroughly. (Soup may separate in the fridge -- this is okay!) Transfer soup to a pot or microwave-safe bowl, and heat on the stove or in the microwave until desired temperature is reached. If you like, top each serving with a dollop of sour cream, a sprinkle of cilantro, and/or a squeeze of lime. MMMM!

New Salsa Finds!

Our pal (and trusty HG proofreader) Jennifer signed HG up for the "Salsa of the Month Club" through Amazing Clubs. AWESOME GIFT!!! As a result, here are some of the best salsas we've discovered so far...

Big S Farms Smoke on the Mountain Habanero Salsa (Medium)
PER SERVING (2 tbsp.): 10 calories, 0g fat, 50mg sodium, 2g carbs, 0g fiber, 1g sugars, 0g protein -- PointsPlus® value 0*

Smoky and herby without being too spicy or at all overwhelming. Tastes super-fresh for a jarred salsa, too.

Gil's Gourmet Simply Zinful Garlic Salsa (Mild)
PER SERVING (2 tbsp.): 10 calories, 0g fat, 160mg sodium, 2g carbs, 1g fiber, 1g sugars, 1g protein -- PointsPlus® value 0*

We just about fell off of our chairs when we tried this one. It's chock-full of soft garlic and peppers and has a slightly sweet wine taste, too. Two yums up.

Burning Asphalt Sauces 2nd Gear Salsa (Medium)
PER SERVING (2 tbsp.): 15 calories, 0g fat, 130mg sodium, 3g carbs, <1g fiber, 1g sugars, 1g protein -- PointsPlus® value 0*

To be honest, we went through this one so fast, we don't remember exactly what it tastes like. But we know we like it... a lot. Apparently it's slow-cooked from a family recipe. Those Asphalts know their salsa!

Not too long ago, Pace rolled out a whole line of crazy flavored salsas. And they're GOOD. We especially like the Triple Pepper, which has great flavor and a good kick without too, too much heat. (P.S. Stats for the Mexican Four Cheese not included! You don't even want to know...)

La Victoria Thick 'n Chunky Salsa
PER SERVING (2 tbsp.): 10 calories, 0g fat, 220mg sodium, 2g carbs, 0g fiber, 1g sugars, 0g protein -- PointsPlus® value 0*

A good, basic salsa that comes in mild, medium, and hot. This one is a crowd-pleaser and easy to find in grocery stores. Solid. It's our go-to grocery store pick.
