United We Chew! Red, White & Blue Nachos

Don't let the cauliflower confuse you. This nacho topping tastes like cheesy, refried beans... YUM!!!
Ingredients: One 7-oz. bag Guiltless Gourmet Blue Corn Tortilla Chips One 15-oz. can white beans, drained 3 wedges The Laughing Cow Light Creamy Swiss cheese 2 1/4 cups cauliflower florets 1 cup salsa 3/4 cup shredded fat-free jalapeno jack cheese (like the kind by Lifetime) or the alternative below 1/3 cup finely chopped onion 1 1/2 tsp. chopped garlic 3/4 tsp. ground cumin Optional: fat-free sour cream
Directions: Preheat oven to 350 degrees.
Place cauliflower in a large microwave-safe bowl with 3 tbsp. water. Cover and microwave for about 5 minutes, until cauliflower is tender enough to mash. Once cool enough to handle, add beans and, using a potato masher or a fork, mash thoroughly. Set aside.
Bring a medium pot sprayed with nonstick spray to medium heat on the stove. Add onion and garlic, and saute until soft and fragrant. Reduce heat to low. Add mashed cauliflower/bean mixture, cheese wedges, and cumin. Stir until ingredients are completely integrated. Raise heat to medium-high, and cook and stir for 2 - 3 additional minutes. Remove from heat and set aside.
Spread out tortilla chips on a large ovenproof plate or baking dish. (Use two plates or dishes, if needed.) Spoon cheesy bean mixture over the chips. Top evenly with shredded cheese.
Bake in the oven for 5 - 10 minutes, until chips are crispy and shredded cheese has melted.
Top with salsa (or serve salsa on the side to keep chips crispy). If you like, top or serve with sour cream. Enjoy!!!

HG Alternative! If you can't find (or don't like) fat-free jalapeno jack cheese, go for reduced-fat cheese -- any white variety. Then each serving of the nachos will have 212 calories and 5.25g fat (PointsPlus® value 6*).
