Frosted Peachy Pinwheels a la Mode

PER SERVING (1 frosted pinwheel with 1/2 cup ice cream): 206 calories, 5.5g fat, 334mg sodium, 36g carbs, 2g fiber, 16g sugars, 5g protein -- PointsPlus® value 6*

Like the love child of a cobbler and a shortcake. And EVERYTHING tastes better with ice cream...

1/4 cup Cool Whip Free, thawed
3 tbsp. fat-free cream cheese, room temperature
2 tbsp. Splenda No Calorie Sweetener (granulated), divided
3/4 cup canned peach slices packed in juice, drained
1 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
1/4 tsp. cinnamon
1 package refrigerated Pillsbury Crescent Recipe Creations Seamless Dough Sheet
4 cups fat-free vanilla ice cream (like Breyers Fat Free)

Preheat oven to 375 degrees.

To make the frosting, combine Cool Whip, cream cheese, and 1 tbsp. Splenda in a small bowl. Mix until smooth and well blended. Refrigerate until chilled.

Halve peach slices lengthwise and set aside. In a small bowl, combine butter, cinnamon, and remaining 1 tbsp. Splenda; mix thoroughly and set aside.

Unroll dough sheet and lay it flat on a dry surface, with the short sides on the right and left. Spread evenly with butter mixture, leaving a 2-inch unbuttered border on the right side.

Evenly place peach slices vertically over the buttered dough. Starting with the left side, tightly roll dough and peach slices horizontally into a log; seal by pinching together the right edge and the roll itself. Slice into 8 pinwheels with a sharp serrated knife.

Spray a baking sheet with nonstick spray and evenly place pinwheels flat on the sheet with swirl sides facing up.

Bake for 15 minutes, or until golden brown. Allow to cool slightly.

Evenly distribute icing among the tops of the pinwheels. Just before serving, top each pinwheel with a 1/2-cup scoop of ice cream. Weeeee!!!

HG Alternative! Make these with light ice cream rather than the fat-free kind, and each pinwheel a la mode will have 220 calories, 8.5g fat, and 0.5g fiber (PointsPlus® value 5*).
Banana Split Pie

PER SERVING (1 slice): 161 calories, 1.25g fat, 81mg sodium, 36g carbs, 3g fiber, 17g sugars, 3g protein -- PointsPlus® value 4*

People will FLIP when you slice into this crazy multi-serving dessert...

One 60-calorie sugar-free chocolate pudding snack (like the kind by Jell-O)
2 cups Cool Whip Free, thawed
3 cups fat-free vanilla ice cream (like Breyers Fat Free)
1 1/2 cups sliced strawberries
2 bananas, sliced
2 tbsp. Hershey's Lite Chocolate Syrup
1 tbsp. crushed dry-roasted peanuts
8 maraschino cherries

Set out all your ingredients so your ice cream doesn't melt too much once you start assembling.

Combine pudding snack with Cool Whip in a bowl and mix thoroughly. Set aside.

Once slightly softened, scoop ice cream into a large pie pan and spread into an even layer along the bottom. Evenly place strawberry slices flat over the ice cream, pressing down lightly so they adhere.

Spread pudding/Cool Whip mixture into a smooth layer over the strawberries. Evenly place banana slices flat over this layer, and drizzle with chocolate syrup. Sprinkle with nuts and evenly place the cherries on top of the pie. Freeze for about 4 hours (or overnight), until completely firm.

Allow pie to sit at room temperature for 5 minutes before slicing. Cut into 8 slices and enjoy!

HG Alternative! Prepare this pie with light ice cream in place of the fat-free stuff, and each slice will have 170 calories, 3.25g fat, and 2g fiber (PointsPlus® value 4*).
