Good Cluck!

In honor of National Fettuccine Alfredo Day (tomorrow…yay!), HG's whipped up yet another delicious and completely guilt-free Alfredo dish.  A heaping bowl of our creamy pasta with chicken has less than one-fifth the amount of calories in Macaroni Grill's ridiculous version.  And ours will also save you more than 90 fat grams.  Yes, NINETY! Check it out:



1 package House Foods Tofu Shirataki noodles, Fettuccine Shape**

1 wedge The Laughing Cow cheese, Light Original Swiss

2 tsp. fat-free sour cream

2 tsp. reduced fat grated parmesan cheese

5 oz. skinless chicken breast; grilled with nonstick spray only
Optional: salt, pepper, and paprika


Drain and rinse noodles well.  Dry noodles thoroughly (use paper towels to soak up as much moisture as possible) and use a knife to slice them up a bit.  Next, top noodles with both cheeses and fat-free sour cream, then microwave for one minute. Stir and microwave for one additional minute.  Slice up chicken breast and add to pasta.  For added zing, season to taste with salt, pepper, and paprika. Enjoy!

Okay, it's no shocker that pasta drenched in buttery cream sauce isn't exactly a diet-conscious dinner choice.  Fettuccine Alfredo has been called a "heart attack on a plate" and our pals over at the Center for Science in the Public Interest once deemed it the worst dish, nutritionally speaking, that they had analyzed in 23 years.  But never in our wildest dreams could we have imagined nutritionals THIS frightening.  We knew it would be bad, but 97 fat grams bad?!  1,300+ calories bad!?!  35 POINTS BAD?!?!?! Yikes!  Scarier still is the fact that the chicken in this dish accounts for 18 of those fat grams.  Did the chicken bathe in oil before hopping into the bowl?  But, like most humans, we get giddy at the thought of tender chicken chunks swimming in rich cheesy sauce with flat pasta noodles.  And now whenever we get a craving for this stuff, we march straight to the kitchen to whip up the latest in guilt-free 'fredo -- Fettuccine Hungry Chick-fredo!

**HG Alternative:  If you're absolutely against using the fabulous Tofu Shirataki noodles, you can still save fat and calories by preparing this dish with 1 cup cooked whole wheat pasta, instead.  Nutritionals would then be: 395 calories, 5.75g fat, 446mg sodium, 43g carbs, 4g fiber, 3g sugars, 44g protein = 8 Points.
