Say Cheese!
We're always up for eating breakfast items that taste like dessert (woohoo!). And sweet, cheese-packed crepes with a buttery crisp make us as giddy as squirrels in a convenience store. One key ingredient in our crazy-calorie-saving recipe swap is Melissas ready-to-use Crepes. These super-skinny wraps are sweet and delicious and contain just about 50 calories each! (Pssst Most other brands of dessert crepes -- which are located in the produce section -- have similar stats. Frieda's Crepes are a bit smaller, but also work great.) Check out this too-easy recipe!

1 (9") Melissas Crepe; halved (or another ready-to-use dessert crepe**)
3 tbsp. fat-free cottage cheese
1 tbsp. fat-free cream cheese; softened
1/4 tsp. vanilla extract
1 tsp. Splenda, Granular (or half of any no-calorie sweetener packet)
dash of cinnamon
4 spritzes zero-calorie-per-serving butter spray (such as I Cant Believe Its Not Butter! Spray)

In a small bowl mix cheeses, sweetener, vanilla and cinnamon until creamy and well blended (aim to eliminate any lumps in the cottage cheese). Place half of mixture in the center of each of the two crepe-halves. Carefully fold crepes up envelope-style (sides first), ensuring that there is nowhere for the cheese mixture to ooze out. Bring a pan to medium-low heat, and spray it twice evenly with butter spray. Place blintzes on pan with the seam-sides down. Spray the top of each blintz once with butter from 6 inches away. After one minute, gently turn blintzes over in the pan. Remove pan from heat after 30 seconds, and carefully remove and plate blintzes. Enjoy exactly as is, or top with some sugar-free syrup, fresh fruit and/or fat-free whipped topping!

Cheese Blimp-zes!
Yep, that's our new name for 'em. This traditional Jewish dish starts with thin pancakes (aka crepes). Those are wrapped around a fatty cheese filling (made with ingredients like cottage cheese, cream cheese, egg yolk, butter and sugar). THEN they're given a standard butter-in-the-pan frying treatment to crisp-up the outsides. Yikes! The stats below are for regular-sized ones prepared with just a tablespoon of butter. But ones served at diners and breakfast cafés are likely larger and bathed in even more butter, making 'em MUCH worse.
