Mash Appeal...

If you're a mashed potato-lover you NEED to know about Imitaters, a brand new mashed potato substitute (made from cauliflower) that comes in three flavors--Garlic, Smoky Chipotle and The Works. They're all low carb, low cal and fairly low in fat (The Works has more fat than the others) and they taste AWESOME.  Serve them as a side dish, like regular mashed potatoes, or as a veggie or chip dip. They're hard to find in stores but you can buy Imiaters online as well. All three flavors are great--we even tried mixing all of them together, which was a rousing success!

You've Got Kale!

Pay attention, potato chip-lovers. Baked kale (similar to its cousins spinach & lettuce, but far less popular) is a great swap for chips.  We know it sounds weird, but this is a fun snack to munch on while watching TV. Here's what you do. Preheat your oven to 350 degrees. Wash and cut up a bunch of kale. Toss onto a baking sheet and drizzle with some olive oil. Top with whatever seasonings you like -- Mrs. Dash, salt, pepper, BBQ seasonings -- your call. Bake for 10 minutes. You don't believe us?  Try it.

Soup Swap 
Sure thick, rich potato soup tastes good, but it can have a bazillion calories, carbs and fat grams. Pacific Creamy Butternut Squash soup is a great substitute. A serving has just 90 calories and 2g of fat. All-natural and awesome, this soup is sold in stores like Whole Foods, Target, Safeway, Kroger, Publix & Albertson's.

Faux-tato Salad

1 bag frozen cauliflower (freshly steamed can be used as well)
4 hard-boiled egg whiles, chopped
1/2 cup lowfat or fat free mayo
1 Tbsp. Dill Relish
1 tsp. Yellow Mustard
Salt & Pepper to taste

Simmer cauliflower until heated, but not mushy. In mixing bowl combine cauliflower, mayo, mustard, eggs. Add salt & pepper to taste. Serve warm or cold. It's SO low in calories, carbs & fat.

The Great Steak & Potato Company is NOT the place to break down and cave into your potato cravings. Their large fries have 2,105 calories and 109g of fat!  YUCK!  Even a small order has over 1000 calories.  So, what's it gonna be?  Lamp-heated mall fries or your skinny jeans?
