Ingredients:
12 slices light bread
9 oz. (about 3 links) fully cooked chicken sausage with 8g fat or less per 3-oz. serving (like the kind by Applegate Organics), sliced into coins
3 cups peeled and thinly sliced Granny Smith apples
2 cups egg whites or fat-free liquid egg substitute
1 1/2 cups unsweetened plain almond milk
1/4 tsp. each salt and black pepper
3/4 cup shredded reduced-fat cheddar cheese
Directions:
Lightly toast bread. Cut into cubes, and place in a large bowl.
Bring a large skillet sprayed with nonstick spray to medium-high heat. Cook and stir sausage coins until browned, about 3 minutes. Transfer to the large bowl.
Remove skillet from heat; clean, if needed. Re-spray and return to medium-high heat. Cook and stir apples until lightly browned and slightly softened, about 4 minutes. Transfer to the large bowl.
In another large bowl, combine egg whites/substitute, almond milk, salt, and pepper. Mix thoroughly. Add this mixture to the first large bowl, and stir to coat. Cover and refrigerate for at least 4 hours. (Overnight works well.)
Preheat oven to 350 degrees. Spray a 9" X 13" baking dish with nonstick spray.
Pour mixture into baking dish. Bake until top has lightly browned and strata is cooked through, about 45 minutes.
Sprinkle with cheese, and bake until melted, about 5 minutes.
