HG's Alternate Ultimate Omelette

Om' Nom Nom!

The first step to starting off 2012 right? Starting your DAY right! Eating a protein-packed breakfast will fuel you up and set you up for success. But instead of falling for a fatty restaurant omelette, make this insanely delicious guilt-free one. Tasty morning goodness? This just might be your year...

1 frozen meatless or turkey sausage patty with 80 calories or less (like the kind by Morningstar Farms or Jimmy Dean)
1 slice center-cut bacon or turkey bacon
1/2 cup sliced mushrooms
1/4 cup diced onion
1/4 cup diced bell pepper
1/4 cup diced tomato

3/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
3 tbsp. shredded fat-free cheddar cheese

Optional toppings: diced chives, additional diced tomato

Prepare sausage patty and bacon in a skillet sprayed with nonstick spray or on a microwave-safe plate in the microwave. (Refer to packages for cook times and temperatures.) Chop or crumble and set aside in a bowl.

Bring a medium skillet sprayed with nonstick spray to medium-high heat. Add mushrooms, onion, and pepper. Cook and stir until softened, 3 - 5 minutes. Transfer veggies to the bowl with sausage and bacon. Add tomato, stir, and set aside.

If needed, wash and dry skillet. Remove from heat, re-spray, and bring to medium heat. Add egg substitute and let it coat the skillet bottom. Cover and cook until solid enough to flip, about 3 minutes.

Flip egg and top one half with filling. Sprinkle filling with cheese. Cover skillet and cook until cheese melts, about 1 minute.

Fold egg over filling and transfer to a plate. Enjoy!

Fight it! Denny's Ultimate Omelette
Denny's Ultimate Omelette

A Big Ulti-mess

We've made it -- the big holiday season is over! Now it's time to jump straight into eating smart, and there's no better meal to start with than breakfast. Studies show that dieters who regularly eat breakfast lose more weight than those who don't... but be careful! If you're a big fan of eggy restaurant b-fasts, it's really easy to end up with a super-heavy a.m. meal. ESPECIALLY at Denny's. This fully loaded morning menu item is chock-full of delicious yet fatty things: sausage, bacon, cheese, and eggs. Plus, it comes with bread and either hash browns or grits, which can add nearly 500 extra calories to the stats below! SO unnecessary. A better way to have an ultimate breakfast is to make our swap. It has all the essentials -- including bacon, sausage, cheese, and eggs -- but calls for our go-to guilt-free ingredients. (Side note: The carbs in our recipe mostly come from veggies. Denny's must be using a scarce amount of the healthy stuff to come up with a carb count so low!) So pull yourself out of the holiday-indulgence rut and start eating right... the HG way!
